Today Show: Tailgating Recipes
In honor of Sunday Night Football on NBC, Today Show invited hometown chefs to share their ideas for tailgating recipes. In a showdown against Seattle, Chef Beau MacMillan from the Paradise Valley, Arizona restaurant Sanctuary prepared Fried Chicken Sliders on Cheddar Biscuits, along with Pork BLTs. The competition included Pigs in a Blanket, Salmon Sliders, and Clam Dip.

- 6 skin-on boneless Chicken Breasts
- 4 tbsp Hot Sauce
- 1 chopped White Onion
- 2 cups Flour
- 1 tsp Garlic Powder
- 1 quart Buttermilk
- 1 chopped Green Pepper
- 1 tsp Smoked Paprika
- 2 tbsp Salt
- 1 tsp Pepper
Cheddar Biscuit Ingredients
- 3 lb Flour
- 4 tbsp Baking Powder
- 6 cups shredded Cheddar Cheese
- 1 lb cubed cold Butter
- 4 cups Buttermilk
- 1/2 cup minced Scallions
- 1 tbsp Sugar
- 2 tbsp Sesame Seeds
- 1/2 cup minced Scallions
- 6 Eggs
- 1 tbsp Salt
- 1 tbsp Pepper
Beau MacMillan: Today Show Fried Chicken Sliders Recipe Directions
- Divide each chicken breast into two or three slider-size pieces.
- Salt buttermilk and mix with the hot sauce. Add in green pepper and onion. Use this to marinate the chicken overnight.
- Season flour with garlic powder, smoked paprika, salt and pepper.
- Dredge chicken in flour mixture and fry at 360 F until crispy.
- Transfer to a 250 F oven until completely cooked through.
- Serve chicken on split biscuits, topped with pickles.
- Cheddar Biscuit Directions
- Combine dry ingredients in a stand mixer with a paddle attachment.
- Mix in cubed butter until the dough crumbles. Mix in cheese with chives.
- Separately, whisk eggs into buttermilk. Work wet ingredients into dry mix to combine.
- Transfer dough to a flour-dusted prep surface.
- Roll dough out to 1.5” thick and cut into rounds.
- Bake for 25 minutes at 325 F.
