Ingredients

  • 4 fillets fresh farm raised tilapia
  •  1/3 cup organic maple syrup
  •  1/4 cup soy sauce
  •  fresh cracked pepper (to taste)
  • 1 tsp each paprika and garlic salt

Directions – Marinade

  1. Mix the soy sauce, maple syrup, and garlic salt together in a bowl.
  2. Take the tilapia, which is a really light, “not-fishy” fish, and let it sit in the marinade for 20-25 minutes in the fridge.
  3. Now it’s time to put the tilapia on the grill. Joey pointed out how great the maple syrup makes the fish, which on the show, had already turned a nice, crispy brown.
  4. Kelly said that she is very intimidated by cooking fish, because she never knows when it’s done. Joey advised that five minutes on each side is the maximum for any fish.

Directions – Mango Salsa

  1. To make a nice mango salsa to accompany the tacos, just throw together some diced mango, onion, tomato, and a little pico de gallo.
  2. Then take tortillas (Joey likes corn), and assemble the tacos with the salsa and some avocado.

Joey said that the tacos are very healthy, and only 180 calories each. Kelly and Mike dug right in, declaring them totally delicious.

I've been writing since I can remember, and consider myself lucky to be making a career out of it.
