David Myers: The Talk Quinoa Egg Bowl Recipe
Broccoli Rabe is more bitter than normal broccoli, but that’s by design for this dish. Chopping it after steaming will make it easier to cut and ensure uniform cooking, Myers said. Quinoa is healthy and high in protein. This could even be good at breakfast. This style of egg preparation is between hard- and soft-boiled.
Ingredients
- 2 cups Quinoa
- 1 tbsp Soy
- 1 bunch chopped Broccoli Rabe
- 4 Eggs
- 1/2 tbsp grated Ginger
- 1/2 tbsp Olive Oil
Directions
- Cook quinoa according to package directions.
- Steam whole broccoli rabe; chop after cooking.
- Place quinoa in a serving bowl and top with broccoli.
- Mix ginger, soy, and olive oil; drizzle over broccoli.
- Cook four eggs in boiling water for about six minutes.
- Remove shells and serve on top of broccoli bowl.
