Rachael Ray: Curry Meatloaf Recipe Ingredients

Rachael Ray: Curry Meatloaf Recipe with Ketchup & Sriracha Sauce

Rachael Ray’s unique Curry Meatloaf probably won’t taste like any meatloaf you’ve tried before, and that’s a good thing!

  • 7 eggs, divided
  • 1/4 cup curry powder or create your own blend with turmeric, cumin, coriander in equal parts and a little ground mustard, cinnamon and paprika for balance
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 carrot, grated or minced
  • 1 fresh chili pepper, seeded and finely chopped
  • 1 inch ginger, grated
  • 3 to 4 cloves garlic, finely chopped
  • 1/4 cup dry sherry
  • 2 pounds ground turkey breast, turkey or chicken
  • 3 slices good quality white bread, cubed
  • Milk, to soak bread
  • Salt and pepper
  • 1/2 cup organic or low-sugar ketchup
  • 1/4 cup sriracha sauce
  • A handful of cilantro or parsley, chopped
  • 4 scallions, whites and greens finely chopped
  • Mango chutney, to pass at table, preferred brand Patak’s
  • Buttered, grilled garlic Naan bread

Rachael Ray: Curry Meatloaf Recipe Directions

  1. Put five eggs into cold water, cover them in water, then, boil them in a covered pan and let them stand for two minutes. This is 2 minutes short of hard boiling them.
  2. Drain the eggs, crack the shells, and soak them in water to loosen them up. Then peel the eggs.
  3. Warm a skillet up with spices in it to toast them. Then, add oil to the pan, stir it until it has heated up, and add onions, carrots, chili, ginger and garlic.
  4. Stir the ingredients for a few minutes to soften them, then, deglaze the pan with sherry and let it cool off.
  5. While your oven is preheating to 375 degrees Fahrenheit, place your meat in a small bowl.
  6. Soak bread in milk, then squeeze the milk out of the bread and crumble it over the meat.
  7. Season the meat with salt and pepper, and add a mixture of ketchup and sriracha to the meat.
  8. Add cooled curry spice, vegetables, cilantro or parsley, and scallions to the meat mixture.
  9. Beat two eggs and add these into the meat mixture, as well.
  10. Combine the meat loaf mixture together.
  11. Place parchment on a large baking sheet and place the meatloaf mix down on it in a rectangular shape.
  12. Place the cooked eggs end to end through the meat, then mound the meat over top of the eggs.
  13. The finished loaf should be 10 to 12 inches long and 3 to 4 inches high. The eggs should be nested evenly in the meat mix.
  14. Brush the meat mix with some more ketchup and sriracha sauce.
  15. Bake the meatloaf for 60 to 75 minutes until it has cooked through.
  16. Once done, allow the meatloaf to stand for 10 minutes.
  17. Slice and serve the meatloaf  with a dollop of mango chutney and naan bread.
