Today Show: Thanksgiving Leftover Recipes

You could also throw in some green bean casserole. Don’t worry if you don’t have everything listed in the ingredients. Customize it by using whatever is still in the fridge after the feast. The spicy chiles will be balanced by the sweet potatoes, or you could use mashed potatoes, which would neutralize the heat with their dairy content.
- 2 tsp minced Garlic
- 1 1/2 tsp dried Mexican Oregano
- 1 4.5-oz can chopped Green Chiles (do not drain)
- 3 cups chopped leftover Turkey
- 4 cups Sweet Potato Puree
- 2 cups crushed Tortilla Chips
- 1 cup fine chopped Onion
- 1 tsp ground Cumin
- 2 1/2 cups Turkey Gravy
- 1 tbsp minced Chipotle in Adobo (+ 1 tbsp Adobo Sauce)
- 1 1/2 cups defrosted frozen Corn
- 5 oz coarse grated Sharp Cheddar Cheese
- chopped Cilantro
- 2 tbsp Vegetable Oil

- Preheat oven at 350 F.
- Heat oil on medium high in a skillet. Turn heat to medium low before adding onion. Stir a few times while cooking to soften for around five minutes.
- Add in garlic with oregano and cumin, stirring for one minute.
- Add gravy with chipotle and adobo sauce, green chiles, corn, and turkey. Stir and cook until hot.
- Take off stove and drop in spoonfuls of sweet potato puree. Use a spatula to smooth it in an even layer.
- Spread an even layer of cheese, followed by a layer of tortilla chips, on top of the filling.
- Bake on the middle oven rack for about 25 minutes, or until bubbly at the edges.
- Take skillet out of the oven. Preheat the broiler.
- Brown your skillet pie about four inches away from the heat, until it is golden.
- Serve immediately and garnish with cilantro.
