Today Show: Claire Thomas Smeach Recipe
Tamron Hall and Willie Geist talked to blogger Claire Thomas who’s also the author of The Kitchy Kitchen about what to do with the spare summer fruit in your kitchen and other dessert recipes. The first thing they talked about was the smeach, which is like “if a s’more and a peach cobbler had a baby.” She just had leftover peaches, a bag of marshmallows, graham crackers and thought she’d try it out. And it really worked
Ingredients
- Cayenne Pepper
- Peach
- Graham Crackers
- Light Brown Sugar
- Marshmallows
Directions
- First you add cayenne pepper to brown sugar, but you don’t have to if you don’t like spice.
- Then add it to the peaches, which caramelizes.
- Wet skewers, put peaches and marshmallows on the skewers and broil.
- Take them out when it looks good.
- Put them on the graham cracker.
Claire Thomas: Kitchy Kitchen Pineapple Chili Pops Recipe

She also showed a pineapple chili pops recipe, which is her favorite summer snack. She really likes sweet and spicy together, and this one had it too. She had a chili salt mixture and pineapple. She said that the salt with pineapple is great together.
You can use other fruit too. This dessert looked like the best to me. I’ve been seeing a lot of great ways to use pineapple that I haven’t thought of this summer, and I’d definitely like to try this one out. I also like the idea of the sweet and spicy together. They also talked about soaking pineapple in vodka, which is a great idea.
Ingredients
- Ancho Chili Powder
- Chipotle Chili Powder
- Coarse Sea Salt
- Pineapple
Directions
- Skin and core the pineapple and cut it up
- Sprinkle the mixture on top
Today Show: Kitchy Kitchen Pig Candy Recipe
They had to quickly move on to the next dessert, which was pig candy. It’s a bar snack and is apparently fantastic with beer. It’s basically bacon that’s been coated in brown sugar and cayenne pepper and caramelized. They actually tried this one because they’d been eyeing it the whole time and said that it was incredible. Willie said to stop what you’re doing and go make it.
Ingredients
- Light Brown Sugar
- Bacon
- Cayenne Pepper
Directions
- Coat the bacon in brown sugar and cayenne pepper.
- Bake it until it gets nice and caramelized and golden brown.
