Giada De Laurentiis: Today Show Tricolore Salad Recipe Ingredients

“You don’t want to wait till the last minute” on all the Thanksgiving dishes you are making, Giada said. You can make the salad ahead and just toss it in the dressing right before serving time. This recipe is also on the menu at Giada’s newest restaurant, Giada at The Cromwell in Las Vegas.
The name means that there are three colors in your salad, but you can use whatever greens you like. Feel free to make substitutions, or go with the Kale, Endive, and Radicchio that Giada used in her presentation.
This salad does not skimp on the cheese. When Giada speculated that Martha would prefer cream cheese or creme fraiche in her dressing, Stewart insisted that she loves Italian dressing.
- 1 head shaved Radicchio
- 1/2 bunch thin sliced Tuscan Kale
- 3 heads thin sliced Endive
- 1/2 cup chopped toasted Walnuts
- 5 Medjool Dates (each in six wedges)
- 8 thin slices Prosciutto
Dressing Ingredients
- 1/4 cup Apple Cider Vinegar
- 1/2 cup room temperature Mascarpone Cheese
- 3/4 cup crumbled Gorgonzola Cheese
- 2 tsp Walnut Oil
- 1/4 cup Olive Oil
- Salt & Pepper
Today Show: Giada De Laurentiis Tricolore Salad Recipe Directions
- Whisk vinegar with mascarpone, oils, salt and pepper for the dressing.
- Fold in gorgonzola with a spatula and let stand at room temperature for 10 minutes before chilling or serving.
- Toss salad ingredients (except prosciutto) together in a bowl and dress with 2/3 cup dressing.
- Arrange prosciutto on a serving dish and top with salad. Garnish with extra gorgonzola shavings.
