Kathie Lee Gifford and Hoda Kotb talked about Kathie Lee’s latest book, The Good Gifts: One Year in the Heart of a Home. Check out her sister-in-law’s ideas for Coconut Custard Pie and Chocolate Custard Pie.

“The book is exquisite,” Hoda Kotb said. Kathie Lee introduced her “sister-in-love” Sandy Epstein, the family baker who specializes in custard pies. Follow the steps to make the crust and the custard, finally choosing your flavor preference for this dessert.

Today Show: Sandy Epstein Pie Crust Recipe

Ingredients

Kathie Lee & Hoda: Good Gifts Chocolate Custard Pie Recipe + Coconut

  • 2 cups Flour
  • 1 cup Crisco Shortening
  • 1 tbsp White Vinegar
  • 1 Egg
  • 3/4 tsp Salt
  • Cold Water (as needed for consistency)

Directions

  1. Combine flour, salt, and shortening in a bowl. Mix to form coarse crumbs.
  2. Add the egg, vinegar, and up to 2 tbsp cold water to combine ingredients.
  3. Use your hands to form dough into two balls.
  4. Roll crust onto flour-dusted wax paper and transfer to a pie shell. Use a fork (or your fingers) to flute the edges.
  5. Bake about 11 minutes at 400 F, to light brown. (Be careful not to overbake.)

Kathie Lee & Hoda: Sandy Epstein Custard Pie Mix Recipe

Ingredients

  • 3/4 cup Sugar
  • 3 Eggs
  • 1 can Evaporated Milk
  • 1/2 tsp Vanilla
  • 4 tbsp Flour
  • 1/4 cup Milk
  • 1/2 cup Water

Directions

  1. Mix flour with sugar, eggs, and milk in a bowl. Reserve.
  2. Combine evaporated milk and water over a double boiler.
  3. Slowly whisk in the flour mixture, stirring until smooth.
  4. Cook over simmering water until it thickens like a pudding.
  5. Take off heat and add butter and vanilla.
  6. Mix in your choice of flavor ingredients. (Keep reading for ideas.)

Today Show: Kathie Lee & Hoda Coconut Custard Pie Recipe

Ingredients

  • Custard Mix
  • Pie Crust
  • 1/2 cup Sweetened Coconut

Directions

  1. Preheat the oven at 350 F.
  2. Add coconut to the cooked custard pie filling.
  3. Pour pie filling into the pre-baked pie shell.
  4. Top with whipped cream and bake until golden brown, around 10 minutes.

Kathie Lee & Hoda: Sandy Epstein Chocolate Custard Pie Recipe

Ingredients

  • Custard Mix
  • Pie Crust
  • 1 bar Milk Chocolate

Directions

  1. Preheat oven at 350 F.
  2. Add chocolate to custard filling during cooking, stirring to completely melt.
  3. Pour into the pre-baked pie shell and cook about 10 minutes.
  4. Top with whipped cream and chill before serving.
