Ingredients

- 2 cups Flour
- 1 cup Crisco Shortening
- 1 tbsp White Vinegar
- 1 Egg
- 3/4 tsp Salt
- Cold Water (as needed for consistency)
Directions
- Combine flour, salt, and shortening in a bowl. Mix to form coarse crumbs.
- Add the egg, vinegar, and up to 2 tbsp cold water to combine ingredients.
- Use your hands to form dough into two balls.
- Roll crust onto flour-dusted wax paper and transfer to a pie shell. Use a fork (or your fingers) to flute the edges.
- Bake about 11 minutes at 400 F, to light brown. (Be careful not to overbake.)
Kathie Lee & Hoda: Sandy Epstein Custard Pie Mix Recipe
Ingredients
- 3/4 cup Sugar
- 3 Eggs
- 1 can Evaporated Milk
- 1/2 tsp Vanilla
- 4 tbsp Flour
- 1/4 cup Milk
- 1/2 cup Water
Directions
- Mix flour with sugar, eggs, and milk in a bowl. Reserve.
- Combine evaporated milk and water over a double boiler.
- Slowly whisk in the flour mixture, stirring until smooth.
- Cook over simmering water until it thickens like a pudding.
- Take off heat and add butter and vanilla.

- Pie Crust
- 1/2 cup Sweetened Coconut
Directions
- Preheat the oven at 350 F.
- Add coconut to the cooked custard pie filling.
- Pour pie filling into the pre-baked pie shell.
- Top with whipped cream and bake until golden brown, around 10 minutes.
Kathie Lee & Hoda: Sandy Epstein Chocolate Custard Pie Recipe
Ingredients
- Custard Mix
- Pie Crust
- 1 bar Milk Chocolate
Directions
- Preheat oven at 350 F.
- Add chocolate to custard filling during cooking, stirring to completely melt.
- Pour into the pre-baked pie shell and cook about 10 minutes.
- Top with whipped cream and chill before serving.
