The Talk: Lidia Bastianich Carrot and Apple Salad Recipe

Ingredients
- 3 peeled, julienned Carrots
- Juice of 1 Orange
- 2 tbsp chopped Italian Parsley
- 2 skin-on, julienned Granny Smith Apples
- 3 tbsp Olive Oil
- Salt & Pepper
Directions
- Toss carrots with apples in a bowl.
- Dress with orange juice and olive oil.
- Sprinkle with parsley, salt and pepper.
- Toss and serve cold.
The Talk: Lidia Bastianich Panettone and Chocolate Parfait Recipe Ingredients
Panettone is a classic Italian dessert for Christmas or a New Year’s celebration. This bread features raisins and candied fruits, and Lidia shared how you can take it to a new level by putting it in a parfait.
- 8 oz fine chopped Bittersweet Chocolate (or use Semisweet)
- 2 tbsp Dark Rum
- 2 cups Heavy Cream (1/2 cup chilled)
- 9 slices Panettone
- 1 cup sliced toasted Almonds (and/or 1 cup candied Orange peel)
Lidia Bastianich: The Talk Panettone and Chocolate Parfait Recipe Directions
- Set 1/2 cup chilled heavy cream in a bowl over hot water.
- After about three minutes, add chocolate, stirring slowly until it is fully melted and smooth.
- Stir in dark rum. Keep the chocolate warm, but carefully take the pan off the heat.
- Halve the Panettone slices. Use six pieces to create the bottom layers of half a dozen parfaits, in parfait glasses.
- Drizzle a layer of melted chocolate over each, followed by layers of whipped cream and almonds.
- Repeat the layers of Panettone, chocolate, whipped cream, and almonds.
- Add a final layer of Panettone, garnished with whipped cream and any remaining almonds or chocolate topping.
