The Talk Food Festival: Jason Santos
Chef Jason Santos told The Talk hosts that Chinese Style Baby Back Ribs are one of his favorite meals of all time. With a mango relish and scallion pancakes, you can’t go wrong. Most people probably don’t think to cook them in plastic, which is another thing that makes this recipe stand out. Plastic will create steam and keep the ribs more moist.
The Talk: Jason Santos Chinese Style Baby Back Ribs Recipe Ingredients
Santos said you don’t have to worry about letting the ribs rest with the rub on for very long. After baking the ribs, you will still want to finish them on the grill. (But you could bake them in advance and finish them on the grill before serving.)
- 2 racks Baby Back Ribs
- Asian Rib Rub
Rub Ingredients

- 1/2 cup Paprika
- 2 tbsp Dry Mustard
- 2 tbsp ground Ginger
- 1 tsp ground Allspice
- 1 tsp Red Pepper Flakes
- 2 tbsp ground Star Anise
- Salt & Pepper
Char Siu Ingredients
- 3/4 cup Hoisin Sauce
- 1/2 cup Sherry
- 1 tbsp Sugar
- 1 1/2 cups Brown Sugar
- 1/2 cup Soy Sauce
- 1/3 cup Honey
- Red Food Coloring
- 2 tbsp Salt
Relish Ingredients
- 2 cups diced Mango
- 1/4 cup minced Scallion
- 1/4 cup Sesame Dressing
Dressing Ingredients
- 2 tbsp minced Scallion
- 1 tbsp minced Onion
- 1 tbsp minced Garlic
- 2 tbsp Rice Wine Vinegar
- 1/2 tsp Sugar
- 1 tbsp minced Ginger
- 1 tbsp minced Jalapeno
- 2 tbsp Soy Sauce
- 2 tbsp Sesame Oil
- 1/2 tsp Chili Flakes
- 2 tbsp Olive Oil
Pancake Ingredients
- 4 cups Flour
- 1/3 cup Cold Water
- 1 cup Boiling Water
- 6 tbsp Duck Fat
- 2 cups chopped Scallions
- 1 cup Blended Oil
- 2 tsp Salt
Jason Santos: The Talk Chinese Style Baby Back Ribs Recipe Directions
- Combine ingredients for the Asian Rib Rub.
- Generously rub this onto the ribs.
- Wrap ribs in plastic and aluminum foil.
- Bake ribs at 300 F for at least two hours.
- Check for tenderness and cook longer if needed.
- Bring Char Siu ingredients to simmer; add red food coloring last.
- Prepare the sesame dressing.
- Combine relish ingredients.
- Add boiling water to flour to make the scallion pancake.
- Stir and then cover for three minutes.
- Add cold water. Knead for five minutes.
- Let rest about 15 minutes.
- Add animal fat, scallions, salt, and oil.
- Let rest about 10 minutes.
- Break dough into balls the size of walnuts.
- Roll each ball into a thin pancake size.
- Lightly fry to golden brown; salt and pepper.
- Grill ribs and serve them glazed with Char Siu, alongside relish and pancakes.
