The Doctors welcomed Dr Ian Smith to their show to share his recipes for healthier comfort food. He shared his recipe for chicken with caramelized pears and shallots, as well as his recipe for whole wheat pasta with edamame pesto.

As for a healthy appetizer, you can make an artichoke and basil dip. Dr Smith explained that people automatically think that artichoke goes with spinach, but his dip only has about 50 calories, and you can enjoy it with pita chips or cucumbers. You can also add some Parmesan cheese to the dip for extra flavor.

The Drs: Artichoke Benefits

Artichokes are full of fiber and potassium. Dr Smith said that people will see that healthy food doesn’t mean totally restricting yourself. You can use canned artichokes for the dip as well, because eating healthy doesn’t have to take forever.

This is a great recipe to make when you’re looking for a healthy appetizer for anyone to enjoy.

The Drs: Artichoke-Basil Dip Recipe Ingredients

  • 2 tbsp finely grated Parmesan cheese
  • 2 tsp white wine vinegar
  • salt & pepper to taste
  • 1 14-oz can artichoke hearts in water – drained & halved
  • 1 tbsp extra virgin olive oil
  • 12 large, fresh basil leaves – chopped

  1. Combine all ingredients in a food processor
  2. Pulse until combined
