The Doctors welcomed Dr Ian Smith to share how you can still enjoy your favorite comfort foods without all the guilt, using recipes from his The Shred Diet Cookbook. Dr Smith said he wrote the book because some people think healthy food can’t be tasty, which isn’t true. In addition to this Chicken with Caramelized Pears, Dr Ian also shared his Edmamae Pesto Spaghetti and Artichoke-Basil Dip.
Dr Smith started by sharing a chicken dish that was less than 300 calories with 30 grams of protein. It was made with caramelized pears and shallots. Dr Jennifer Ashton said that pears are one of the best fruits for fiber, antioxidants, and even protein. This recipe is a great way to use ingredients you likely already have for a healthy weeknight meal for you and your family.
The Drs: Chicken With Caramelized Pears & Shallots Recipe Ingredients
- 4 6-oz boneless, skinless chicken breasts
- 2 tbsp extra virgin olive oil
- salt & pepper to taste
- 3 large shallots, peeled & sliced lengthwise
- 2 ripe, firm pears – peeled, cored, & sliced thick
- 1 tbsp cider vinegar
- pinch dried thyme
- 2 tsp honey
Dr Ian Smith: Chicken With Caramelized Pears & Shallots Recipe Directions
- Preheat oven to 375 degree & spray baking dish with cooking spray
- Season chicken with salt & pepper
- Heat olive oil in large skillet over medium-high heat
- Cook the chicken in the skillet, turning once, 4-5 minutes each side, until golden-brown
- Transfer chicken to baking dish & cover with aluminum foil
- Bake until fully cooked, about 20 minutes
- Reheat the skillet over medium heat
- Add shallots & cook until they begin to brown
- Add vinegar to the pan & scrape up the browned bits
- Add pears, honey, & thyme
- Season with salt & pepper to taste
- Cook, while stirring, until liquid is gone and pears start to brown on the edges
- Divide chicken among four plates & spoon pear & shallot mixture over-top
