The Drs: Healthy Dessert
The Doctors had nutritionist Keri Glassman on their show to share her secrets for making delicious desserts without all the guilt. She already shared her recipe for Date Brownies, and then moved on to share her recipe for coconut popcorn balls. Coconut is a naturally sweet food with saturated fat that is actually better for you because it helps you burn fat more efficiently and gives your metabolism a boost.

Honey can help control blood sugar as well, and Dr Travis Stork said every ingredient is good for you, so go ahead and enjoy the popcorn balls in moderation!
The Drs: Coconut Popcorn Balls Recipe Ingredients
- 1/2 C honey
- 1/4 C finely chopped cashews
- 6 heaping cups popcorn
- 1/2 C creamy peanut butter or almond butter
- 1/4 C unsweetened coconut
The Drs: Coconut Popcorn Balls Recipe Directions
- Place parchment paper on a baking sheet
- Pour popcorn into a large bowl
- Mix honey & peanut butter in a small saucepan & cook over medium heat, continually stirring
- When the mixture starts to bubble, cook for no longer than 30 more seconds
- Pour the hot mixture over the popcorn & mix until evenly coated
- Stir in cashews & once the popcorn has cooled, press small amounts of the popcorn into 2-inch balls
- Put the popcorn balls on a baking sheet & sprinkle coconut over them
- Let the balls cool before storing individually in plastic wrap
