The Chew: Vegetable Caponata On Sweet Potato Crisps
Fran Drescher, star of TV Land’s Happily Divorced, paid a visit to The Chew. Drescher said that she loves to eat, but is currently on a restricted diet. Luckily, she lost weight and she feels great!
Drescher said that her mom made a lot of comfort foods like spaghetti and meatballs and lasagna. Chef Mario Batali showed Drescher how to make a vegetable caponata on sweet potato crisps from Sicily. She said she’s never been to Sicily and it’s on her list of places to go.
The vegetable caponata had celery root, fennel, onion, sweet potato, apple cider vinegar, mint and olive oil in it. Batali sauteed everything until it was caramelized. He made the sweet potato cakes with grated sweet potatoes, rice flour, cocoa powder, cumin and almond milk. Batali fried the cakes in olive oil in a very hot pan. He served the caponata on the sweet potato cakes.

Six months ago, Drescher wasn’t feeling well and several doctors kept trying to prescribe pills to mask the problems. She decided to go alternative and she only ate plant-based foods for awhile. It turned out that she was allergic to a lot of things that she was eating before, but now she’s feeling a lot better.
The Chew played celebrity egg timer with Drescher and asked her rapid-fire questions. Drescher said that to impress her on a date, a guy can cook her spaghetti and meatballs. Her favorite Hanukah comfort food is a potato pancake. Lasagna is her guilty food pleasure. Drescher said if she wasn’t an actress, she’d be in politics. If she was stranded on a deserted island she’d bring Brad Pitt, who also her celebrity crush. Drescher said “the flashy girl from Flushing” is happy, healthy and well.

- 2 tsp cumin
- 1 tsp cocoa powder
