The Chew: C Vs C Food Factory
Clinton Kelly and Carla Hall went head to head for a change in their latest C&C Food Factory segment. She put up her Country Greens Recipe against his Spicy Broccoli & Cauliflower Gratin Recipe.
The stakes were high as the co-hosts pitted their side dishes against one another. The tasting table had the final say, and Clinton Kelly was declared the winner in a very close vote.
Clinton Kelly: The Chew Spicy Broccoli & Cauliflower Gratin Recipe Ingredients

The Chew’s Clinton Kelly and Carla Hall faced off in a side dish battle, with Country Greens vs a Spicy Broccoli & Cauliflower Gratin recipe.
- 1 diced Yellow Onion
- 1/2 cup Unsalted Butter
- 1 cup Milk
- 1/2 lb shredded Gruyere Cheese
- 1/4 cup grated Parmesan Cheese
- 1 head chopped Broccoli
- 1 1/2 cups Breadcrumbs
- 1 tbsp Chili Powder
- 4 tbsp Flour
- 1 cup Heavy Cream
- 1/2 lb shredded Cheddar Cheese
- 1 head chopped Cauliflower
- Red Chili Flake
- Olive Oil
- Salt & Pepper
The Chew: Clinton Kelly Spicy Broccoli & Cauliflower Gratin Recipe Directions
- Preheat your oven to 400 F.
- Saute onions in olive oil on medium heat for about three minutes.
- Season onions with chili powder and salt. Set aside.
- Melt four tablespoons of the butter with your flour in a saucepan on medium.
- Stir this mixture into a paste for about two minutes.
- Whisk in milk with cream.
- Cook on medium heat to thicken for about five minutes.
- Take off heat and stir in cheeses until they melt.
- Mix in cooked onions.
- Toss cauliflower with broccoli in a baking dish and mix them evenly.
- Pour the cheese sauce over the veggies.
- Mix breadcrumbs in a bowl with olive oil. Season with salt, pepper, and chili flakes.
- Top your veggies with the seasoned breadcrumbs.
- Bake 30-35 minutes, until golden.
- Remove and cool slightly before serving.
Carla Hall: The Chew Country Greens Recipe Ingredients
- 2 diced Onions
- 2 lb cut up Smoked Turkey Wings
- 3 cloves sliced Garlic
- 2 tbsp Sugar
- 2 1/2 cups Chicken Stock
- 1 tbsp Red Pepper Flakes
- 3 tbsp White Vinegar
- 8 lb Collard Greens
- Red Pepper Sauce
- Seasoned Vinegar
- Olive Oil
- Salt & Pepper
The Chew: Carla Hall Country Greens Recipe Directions
- Saute onions in a pot to caramelize them in olive oil. Add salt.
- Mix in stock, turkey wings, garlic, vinegar, salt, and red pepper.
- Bring to a boil. Reduce and simmer for half an hour.
- Cut the stems off the greens and roll them into cigar shapes.
- Cut the cigars in half lengthwise. Then cut them about 1/4” thick.
- Wash and drain the greens.
- Add greens to stock. Cook until tender, around 35 minutes.
- Season to taste with salt and pepper.
- Serve with red pepper sauce and seasoned vinegar.
