The Chew: Michael Symon’s Pork Chops with Basil Creamed Corn Recipe
Here’s what you’ll need:
- 4 bone-in pork chops (about half-inch thick)
- 2 tablespoons Olive Oil + more to serve
- 1 sliced onion
- 1 pint sliced Button Mushrooms
- 3 ears of Corn, shucked and cut from cob
- Salt, Pepper
- Crushed Red Pepper Flakes (optional for a kick)
- 1 lime, zest and juice separate
- 1 sliced Jalapeno
- 1/2 cup water
- 1 tablespoon sour cream
- 1/2 cup, torn, loosely packed basil
Here’s how you make this recipe:
Take a cast iron skillet and add 1 tablespoon of olive oil. Let that heat to super hot while you season the pork with salt and pepper. Once the skillet is hot, add the chop and cook no longer than four minutes on each side. Set aside to rest.
Take another skillet over medium high heat and put in the remaining olive oil. Add in onion, mushrooms and cook until the mushrooms begin to crisp. Add corn and jalapeno, seasoning with salt, pepper, lime zest, and red pepper flakes. Michael Symon suggests grilling the corn while it’s still on the cob to add smokey flavor. Cook this for two minutes and deglaze the pan with water. Once the water is mostly evaporated, add lime juice. Remove from the heat and stir in sour cream and basil.
Serve these dishes together and squeeze some lime juice and olive oil over them to finish.
