How long would you stand in line for a chili dog? If you are a customer of Pink’s in Los Angeles, you could be waiting an hour to order. But while you’re in line, you might recognize some stars among the familiar faces. Michael Symon used Pink’s as his inspiration for a hot dogs chili recipe that recreates the Hollywood experience. This recipe has everything, including tomatoes, chipotle, and even herbs.
Symon recommended a hot dog with a natural casing, for that snap when you bite into it.

Michael Symon recreated the Pink’s Hot Dogs chili recipe on The Chew in honor of the Taste of Tinseltown episode.
How early is too early to eat a hot dog? Michael said that he has eaten these chili dogs at 5 a.m. on occasion. His recipe is an all-beef chili, and it includes beer for a yeasty flavor.
Though Michael said that he is not often starstruck, he cannot say the same for his dad, who once tried to accost Meryl Streep in hopes that she would discover him.
The Chew: Michael Symon’s Pink’s Chili Dog Recipe
When it’s time to assemble the dog, put it in the bun and top it with chili. Michael recommended topping it with bacon, chili, mustard, and cheese sauce. But you can customize your own toppings when you make these dogs at home.
Pink’s Chili Dog Ingredients
- 3 tbsp Vegetable Oil
- 2 lb Ground Beef
- 1 Onion
- 3 tbsp Chili Powder
- 1 tbsp Paprika
- 2 Chilis in Adobo
- 2 oz Green Chiles
- 2 cloves Garlic
- 2 tbsp Cumin
- 7 oz Stewed Tomatoes
- 3 cups Broth
- 1 cup Mexican Beer
- Salt & Pepper
- Oregano
- 10 Hot Dogs
- 10 Hot Dog Buns
Michael Symon Hot Dog Toppings
- Cheese Sauce
- Onions (diced)
- Tomatoes (tomatoes)
- Bacon
- Mustard
The Chew Pink’s Chili Dog Directions
- Heat vegetable oil in a dutch oven on medium-high. Add seasoned meat in batches, cooking about seven minutes. Remove and set aside.
- Saute onion with garlic until aromatic, a minute or two. Mix in spices and adobo chiles, cooking until aromatic.
- Add tomatoes and green chiles. Use beer to deglaze your pan with a wooden spoon.
- Return meat to mixture, adding oregano and broth.
- Bring to a boil, then simmer for at least two hours.
- Check that beef is hydrated while cooking.
- Boil water for hot dogs and let them simmer a few minutes to cook until heated through.
- Place each hot dog in a bun.
- Top with chili and optional ingredients. Serve and enjoy!
