First you have to grab some rotisserie chicken, a corn on the cob, a jalapeno, some collard greens and some green onion. Chop it all up and throw it in a bowl. See? I told you it’d be simple. Then put some Adobo sauce (Adobo sauce is a sauce made from chiles, herbs and vinegar) in a saute pan, mix it with a cup of water and heat it up. Add the big bowl of chicken’n’stuff and season it with salt and pepper. Stir it all in, add some Greek yogurt and you’re ready to serve.
Now you just need your tortillas. Get a few corn tortillas, fry them, sprinkle a little cumin and cinnamon on them and then put out a few toppings and everyone can fend for themselves. Everyone gets to choose a little something for themselves. You can have salsa, tomatoes, cheese, lime wedges. Whatever you want. No more worrying about left overs, picky eaters or working too hard in the kitchen.
