The Chew: Daphne Oz’s Thanksgiving Gravy Recipe
The Chew have cooked up a whole Thanksgiving meal in one episode. From the pan seared turkey to the garlic mashed potatoes to the delicious stuffing. But everyone knows the one item that holds all those foods together is the gravy. Daphne Oz steps up to the stove and makes her delicious Thanksgiving gravy recipe to complete the meal.
Oz said she is going to be making about one pint of gravy and she is using the juices from Carla Hall’s pan seared turkey.
The Chew: Thanksgiving Gravy Recipe

- 3 tablespoons Flour
- 1/2 cup Pan Drippings
- 1 cup White Wine
- 2 cups Chicken Stock (warmed)
- 1 bundle of Thyme
- 1 head of Roasted Garlic
- 3 tablespoons Butter
- Salt and Pepper to taste
- Return the saute pan you seered your turkey in, to the stove, over medium high heat, with the juices still in the pan.
To roast the garlic for the next step, cover the garlic in olive oil, wrap in foil and put in the oven at 350 degrees for about 20 minutes, or until the cloves are soft.
- Whisk in the flour to the pan drippings until the mixture resembles sand. Cook for 2-3 minutes, stirring constantly. Deglaze with the wine and continue whisking up the browned bits on the bottom of the pan. Ladle in the chicken stock and toss in the thyme bundle. Squeeze in the garlic cloves.
Michael Symon said to make sure you ladle in each liquid ingredient slowly. If you pour all the wine or chicken stock in at one time, the gravy will become lunpy. And if the gravy does become out lumpy, even after following the instructions, use a strained to get the lumps out.
Bring to a boil and reduce to a simmer, stirring occasionally. Cook for a minimum of five minutes, or until the flour taste is gone from the gravy.
Pull out the thyme bundle and whisk in 2-3 tablespoons of butter. Adjust seasoning with salt and pepper and serve hot.
