The Chew: Dapne Oz Turkey Sweet Potato Hash
Everyone knows the day after Thanksgiving is the best day of the year. Left over Thanksgiving dinner is super delicious and Daphne Oz is making it even better by making her turkey sweet potato hash. On top of it looking scrumptious, the whole dish should cost about $.76 a serving.
She said the turkey sweet potato hash is an Oz family recipe and it is a great way to use up leftovers in a creative way.
The Chew: Turkey Sweet Potato Hash Recipe
- 3 tablespoons Extra Virgin Olive Oil
- 5 tablespoons Butter
- 2 Sweet Potatoes (1/2 inch cubes)
- Salt and Pepper to taste
- 1 pound Leftover Turkey (1/2 inch diced)
- 1 Small Yellow Onion
- 3 Scallions (sliced; separating green and white parts)
- 2 Garlic Cloves (minced)
- 2 Apples (1/2 inch cubes)
- 4 Sprigs of Thyme (leaves taken off the stem)
- 6 Eggs
In a large saute pan heat the olive oil and butter over medium-high heat. Add sweet potatoes and season with salt. Saute for 6-8 minutes just until the potato turns golden brown. Add the turkey and continue to brown for 2 more minutes making sure to continually stir.
Oz likes to keep the skin on the potato because it has a lot of fiber and antioxidants. Feel free to peel the skin off if you would like. If you don’t like sweet potatoes, you can sub in regular potatoes. The turkey is also going to give the dish an extra kick of protein, on top of all the flavors in this dish.
Also, the reason the recipe calls for olive oil and butter is the olive oil with lower the flash point of the butter making it more resistant to burning. Just a little food science.
Toss in onion, scallion whites, garlic, season with salt, and continue to cook. Once onions are soft and garlic is fragrant, about 3 minutes, add apples and saute. Cook just until apples begin to soften. Toss in the thyme.
The apples should still be slightly firm and if you don’t have any apples, any other type of root vegetable will be just fine.
In a large non stick pan heat 3 tablespoons of butter over medium heat until melted. Fry eggs until the whites are cooked and yolks are soft and slightly warm to the touch, about 3-4 minutes. Or make any type of egg you like. These will be sunny side up but any type of egg will be great with the dish.
- Serve an egg on top of each portion of hash. Garnish with scallion greens, salt and pepper to taste.

Michael Symon made sure to apologize at the end of the show for almost ruining Clinton’s Craft Corner today. He said he would be more attentive next time and he made sure to tell his wife that the glitter all over him was from the craft corner, not another women.
Some Twitter fans of the show tweeted some Thanksgiving suggestions. One women tweeted in saying she uses the leftover turkey the next day to makes some dishes. Another woman, @suelabarab, tweeted that she and her husband save change all year long and use it to pay for their Thanksgiving dinner.
