The Chew: Rutabaga Mash

The Chew: Rutabaga Mash Recipe Ingredients

Michael Symon’s Rutabaga Mash recipe is the perfect way to lighten up a side dish with the help of nutritious winter vegetables. (rooey / Flickr)
- 1 C milk
- 1/4 C sour cream
- 3 tbsp flat leaf parsley – chopped, for garnish
- 2 medium rutabagas – trimmed, peeled, cut into quarters
- 4 tbsp unsalted butter
- 2 tsp freshly grated nutmeg
- Kosher salt and freshly ground black pepper
The Chew: Rutabaga Mash Recipe Directions
- Place a pot of salted water over medium-high heat until boiling
- Add the rutabagas
- Cook approximately 15 minutes, until tender
- Drain the rutabagas in a colander, then add back to the pot
- Mash the cooked rutabagas then add the sour cream, butter, milk, and salt and pepper
- Remove to a serving dish
- Finish with grated nutmeg and chopped parsley
