Dr Oz: Broccoli Rabe Cook-Off
Dr Oz and Rachael Ray were hosting a broccoli rabe cook-off with three different people competing to see if their broccoli rabe recipes were the best. Robin shared her recipe for broccoli rabe with chicken and apricots, and then Roberta shared her recipe for agilo e olio with broccoli rabe. Rob was last and he had a delicious recipe for grilled broccoli rabe bread salad with squash and Greek yogurt.
Rachael said the recipe was smoky, which she really liked. Rachael had to make one final vote to see who won the contest and she chose Robin’s recipe as the winner because she likes the idea of getting kids to eat vegetables.
Dr Oz shared that Rachael was in the 9th season of her show and she has a 9 Million Meals project. She wants to help feed 9 million Americans and so far she’s raised 8.5 million meals.
Dr Oz: Grilled Broccoli Rabe Bread Salad With Squash & Greek Yogurt Recipe Ingredients

One fresh, delicious recipe in the broccoli rabe cook-off was a grilled broccoli rabe salad with squash and Greek yogurt. (irrational_cat / flickr)
- 1 C Greek yogurt
- 2 garlic cloves – mashed into a paste
- 1 tsp Spanish smoked paprika
- 1 tbsp cumin seed
- 4 1/2-inch slices from center of a loaf of crusty bread
- handful of torn basil & mint – for garnish
- extra virgin olive oil & fresh lemon juice – to taste
- 1 large bunch broccoli
- 1/4 C lemon juice
- 1 tbsp salt
- 1/2 tsp red pepper flakes
- 2-3 mixed squash – cut into 1/2-inch thick rounds
- 1/4 C extra-virgin olive oil for brushing bread
- 1/4 C toasted pine nuts or toasted, chopped almonds

Marinade Directions
- Us ea large bowl to whisk the Greek yogurt, lemon juice, garlic, salt, Spanish smoked paprika, red pepper, & cumin seed until smooth
Vegetable Directions
- Add squash to the bowl of marinade
- Rinse broccoli rabe & add to bowl with squash & toss to coat evenly
- Let vegetables marinate at room temperature for about 30 minutes, tossing once or twice to evenly coat
- Brush grilling rack with olive oil
- Arrange summer squash rounds evenly across grill grate & grill for a few minutes on each side
- Remove squash from grill & then arrange broccoli rabe on a single layer on the grill
- Grill for 2-3 minutes per side or until tender
- Remove from the grill & place in a single layer on a large platter to cool
Bread Directions
- Brush each slice of bread (top & bottom) with about 1 tbsp of oil
- Season with salt & pepper
- Grill bread on both sides, a few minutes per side
- When cool enough to handle, cut into 1/2-inch cubes
Salad Directions
- Use a large serving platter & place bread cubes, broccoli rabe & summer squash before garnishing with toasted nuts, basil, & mint
- Season with salt & pepper, then drizzle with extra-virgin olive oil & lemon juice to taste
- Serve warm or at room temperature
