Dr Oz: Cooking With Cottage Cheese
According to Dr Oz, cottage cheese is the health food you want to start eating again if you’re concerned about your weight, blood pressure, or blood sugar. Fortunately, there’s a lot more you can do with the comeback food than eat it straight out of the bowl. Dr Oz turned to his friends at the Institute of Culinary Education to see if they could come up with ten ways to make cottage cheese taste delicious.
Rhenotha was joined by two cottage cheese skeptics to see how they would feel about the tasty recipes. The first dish they tried was Whole Grain Cottage Cheese Pancakes.
Dr Oz: Whole Grain Cottage Cheese Pancakes Recipe Ingredients

If you’re not a fan of plain cottage cheese, you’ll want to give these recipes a try. You can enjoy all the benefits without the lumpy texture! (mecklenburg / Flickr)
- 1/2 C sorghum flour
- 1/2 C + 1 tbsp tapioca starch
- 1/2 tsp salt
- 1/2 tsp flax meal
- 1/3 C cottage cheese
- 1/2 tsp vanilla extract
- 1 pint blueberries
- 3 tbsp water
- pinch of salt
- 1 C oat flour
- 2 tbsp teff flour
- 1 tbsp baking powder
- 3 1/2 tsp sugar
- 3/4 C buttermilk
- 3 eggs
- 4 tsp canola oil
- 1/2 C maple syrup
- 1 tsp lemon juice
Dr Oz: Whole Grain Cottage Cheese Pancakes Recipe Directions
- Combine all the dry ingredients in a large mixing bowl and stir to combine
- Whisk all the wet ingredients together in a separate bowl
- Make a well in the middle of the dry ingredients and start to add in the wet ingredients, a little at a time to avoid lumps
- Keep adding your wet ingredients to the dry ingredients until a batter is made
- Let the batter sit for 15 minutes while the griddle preheats
- Once the griddle reaches a medium-hot temperature, spray it with non-stick spray
- Ladle the batter onto the griddle to make your pancakes
- Let the pancakes cook until the edges start to look dry and bubbles form on the surface but don’t burst, about two minutes
- Flip the pancakes over and cook on the other side for another couple minutes
- Keep warm or serve right away with the blueberry compote
For the Blueberry Compote:
- Combine maple syrup, blueberries, water, a pinch of salt, and lemon juice in a small pot
- Stir to mix then heat over medium-low until the blueberries start to pop
- Set aside and keep warm

Dr Oz: Creamy Mac & Cottage Cheese Recipe
Ingredients:
- 1/2 C low-fat milk
- 1/4 C grated Parmesan cheese + more to garnish
- 1/4 C pasta cooking water + more if necessary
- 2 C cottage cheese
- 1/4 C grated part-skim mozzarella
- 4 C cooked elbow pasta
- salt and pepper – to taste
Directions:
- Combine the cottage cheese and milk in a food processor and blend until smooth
- Transfer the cheese mixture to a pot over medium-low heat
- When hot, carefully add and stir in the Parmesan, mozzarella, cooked pasta, and pasta water
- Stir until combined then season with salt and pepper
- Garnish with more Parmesan cheese and serve

Dr Oz: Guilt-Free Banana Split Recipe
Ingredients:
- 1/2 C cottage cheese
- 1 tsp ground flaxseed
- 1 tbsp chopped walnuts
- 1 banana – cut in half lengthwise
- 1/2 C mixed berries
- 1 tsp chia seed
Directions:
- Put a sliced banana in a bowl
- Add scoops of cottage cheese to the middle
- Top with berries
- Add chia seeds, flaxseeds, and walnuts
