Today Show: Kathie Lee & Hoda Mom’s Recipes

The Today Show co-hosts Kathie Lee Gifford and Hoda Kotb welcomed their moms onto the show to share Granola and Cream Cheese Pie Recipes. Both dishes would be a great addition to any holiday meal and are incredibly easy to make. Check out the recipes below and share a few recipes of your own in the comments section.

Hoda’s Mom’s Granola Recipe

Today Show Cream Cheese Pie Recipe

Ingredients:

  • 3 cups oats (standard oats, not the quick variety)
  • 1 cup nuts (your choice)
  • 1 cup dried cranberries or cherries
  • 1 cup raisins
  • 1 1/2 tablespoons cinnamon
  • 4 tablespoons honey
  • 1/2 cup oil (canola or vegetable)
  • 1 box Muselix cereal
  • 2 cookie sheets
Preparation:
Take a small sauce pan and heat the honey and oil together. Take the pan off the heat once the two ingredients are well mixed together. Next, combine the box of cereal and stir together with your fingers or a spatula (it sounds like the box of cereal has a variety of ingredients that need to be mixed together once opened).
Pour honey and oil mixture over the cereal and make sure all of the ingredients are coated well. Distribute this new mixture evenly over both cookie sheets and bake at 275 degrees for 1 to 1 1/4 hours. Remove the cookie sheets every so often during this process to stir the ingredients, ensuring everything cooks evenly. Afterwards, let the cookie sheets cool entirely before enjoying!

Kathie Lee’s Christmas Cream Cheese Pie Recipe

Joan Epstein, mother of co-host Kathie Lee Gifford, was kind enough to share her Christmas Cream Cheese Pie Recipe.

Ingredients:

  • 38 ounces of cream cheese
  • 1 cup sugar
  • 1 teaspoon Vanilla
  • 3 egg whites
  • Graham crackers
  • 2 cups Sour Cream

And for the topping: 2 cups sour cream and 2 tablespoons sugar.

Preparation:

Beat cheese until softened and then beat the eggs until stiff before beating into the cream cheese mixture. Add the Vanilla and set aside.

Butter a 9-inch pie pan and crumble up the graham crackers, spreading the crumbs over the bottom of the pan. Pour the cream cheese and egg mixture into the pan and back on 350 degrees for 25 minutes. Let the dish cool before adding the topping, which is simply the mixture of sour cream and sugar.
