Kathie Lee Gifford and Hoda Kotb were joined in the Today's Kitchen by Marcus Samuelsson, who shared his Cabbage Rolls with Maple Syrup Gravy recipe.


Ingredients For Gravy

  • 1 cup red wine
  • 2 tablespoons maple syrup
  • 1 roasted garlic clove, minced
  • 1 shallot, minced
  • 2 thyme sprigs, minced
  • 1/2 teaspoon fresh grated ginger
  • 2 tablespoons soy sauce
  • 1/4 teaspoon chili powder
  • 2 tablespoons olive oil
  • 2 tablespoons chopped bacon
  • 1 tablespoons butter

Ingredients For Rolls

  • 1 head of white cabbage, cut in half, with leaves separated
  • 1/2 pound ground beef
  • 1 pound ground pork
  • 1/2 pound ground lamb
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon ground cardamom
  • 4 mint leaves, chopped
  • 2 teaspoons chopped marjoram
  • 2 tablespoons soy sauce
  • 1/2 cup cooked couscous
  • 2 teaspoons salt
  • 2 tablespoons unsalted butter
  • 3 tablespoons maple syrup
  • Maple syrup gravy

Directions – Gravy

  1. Saute oil, ginger, garlic, shallots and chili powder over medium heat for about 3 minutes
  2. Then add bacon and sauté until crispy, about 10 minutes
  3. Then add remaining ingredients and reduce liquids to half
  4. Whisk in butter and serve

Directions – Rolls

  1. Preheat oven to 350 degrees F
  2. Bring a large pot of salted water to a boil
  3. Add the cabbage leaves and reduce heat and simmer until tender, about 5 minutes
  4. Remove from heat and rinse the cabbage leaves with cold water
  5. In a large bowl, combine the cumin, pork, cardamom, soy sauce, beef, lamb, garlic, mint, marjoram, couscous and salt. Mix thoroughly with your hands until well blended
  6. Place 1/4 cup of meat in the center of each cabbage leaf and roll the leaf around the filling while tucking in the ends
  7. Use a toothpick to secure
  8. Arrange each cabbage roll on a baking sheet and bake for 20 minutes
  9. Melt the butter and maple syrup in a small sauté pan over low heat while the rolls bake
  10. Pour the butter mixture over the cabbage rolls and bake for another 40 minutes
  11. Pour the maple syrup gravy over the cabbage rolls and serve
