Ingredients For Salad

  • 2 cups coarsely chopped skinless, boneless rotisserie chicken
  • 1 cup chopped tomato
  • 1/2 cup thinly sliced red onion
  • 1/3 cup sliced fresh basil
  • 2 (16-ounce) cans cannellini beans or other white beans, rinsed and drained

Ingredients For Dressing

  • 1/4 cup red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 garlic cloves, minced

Directions For Salad

  1. Place chicken, tomato, red onion, basil and beans in a large bowl
  2. Stir gently to combine
  3. Set salad aside while you make the dressing to top it off with

Directions For Dressing

  1. In a bowl, combine vinegar, extra virgin olive oil, lemon juice, Dijon mustard, salt, black pepper and garlic cloves
  2. Stir with a whisk
  3. Drizzle over salad
  4. Toss gently to coat
  5. You are all set for that perfect summer salad that doesn’t require much time or effort for a perfect meal the whole family can enjoy.
