Ingredients

  • 1 cup raisins
  • 1 cup honey
  • 2/3 cup grapeseed, safflower or sunflower oil
  • 1 tbsp vanilla
  • 1 1/2 cups oat flour
  • 1 tsp baking powder
  • 1 tbsp ground cinnamon
  • 3 cups rolled oats

Preparation

  1. To get started, you will want to preheat the oven to 350 degrees
  2. Take a cookie sheet and lightly oil it and set it aside
  3. In a medium bowl, combine the baking powder, cinnamon and flour
  4. Now you will want to add the raisins and oats to the mixture, making sure they are well distributed and set this aside
  5. In a large mixing bowl, place the vanilla, honey and oil
  6. Stir this mixture until well blended
  7. You can now add the flour mixture to the honey mixture and you will want to stir together to form a sticky batter-like dough
  8. Grab the oiled cookie sheet and place rounded tablespoons of cookie dough about two inches apart on the sheet
  9. Place the cookies in the oven and bake for ten to twelve minutes or until cookies are lightly browned
  10. When done cooking, remove the cookies from the oven and let them cool for a few minutes before removing them from the cookie sheet
  11. You can now transfer the cookies to a wire rack to finish cooling
  12. The cookies are done and can be served warm or at room temperature
