For a quick and easy meal, Kathie Lee and Hoda were joined by Chef Perfecto Rocher, who shared his Black Tuscan Kale Salad Recipe for the family to enjoy.


Ingredients For Salad

  • 6 English breakfast radishes sliced thin
  • 30 grams toasted marcona almonds from spain
  • 1 whole preserved lemon
  • 30 grams kalamata olives
  • 1 bunch kale
  • 3 tablespoons grated pecorino cheese
  • 2 granny smith apples, sliced very thin

Ingredients For Lemon Rosemary Dressing

  • 2 tablespoons whole grain mustard
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 1 cup extra virgin olive oil
  • 1 cup lemon juice
  • 1/2 cup white wine vinegar

Directions For The Salad

  1. Clean the kale to prepare it for the salad
  2. Now you will want to slice the cleaned kale
  3. You will want to cut the kale julienne style for this particular salad
  4. Now you will want to cut the radishes and the apples in mandolin
  5. With a knife, you are going to want to hand-slice the almonds into thin slices
  6. Now it is time to work with the preserved lemons
  7. These need to be cut very thin
  8. After you are done with the lemons, you will need to cut the olives
  9. It is time to put all the ingredients you have just cut up and place them in a bowl
  10. Toss the ingredients with the dressing
  11. For taste, you can add some salt and pepper to the salad
  12. To finish the salad off, you will want to add some grated pecorino
  13. For something new and a trick you can try at home, you can add some friend kale “chips”
  14. This salad will serve up to six people, depending on the serving size
