Kathie Lee Gifford and Hoda Kotb introduced the newest member of The Joy Fit Club, Bethany Taylor, who lost 122 pounds while going from 252 pounds and now weighs 130 pounds.
Bethany Taylor: Food Was A Comfort
Bethany Taylor, 28 years old, once weighed 252 pounds and now weighs 130 pounds. She said she was always an overweight child and her weight increased in high school and college.
In graduate school, a close friend of hers passed away and shortly after, her father suffered a ruptured aortic aneurysm and came very close to death. Between trying to finish her degree, going to the ICU every night to see her Dad, grieving for her friend and seeking employment, she went to a very dark place and turned to food for comfort.
Kathie Lee & Hoda: Bethany’s Wake Up Call
In July 2009, she saw a picture of herself and was shocked and disappointed in what she saw. She decided to see how much she really weighed and could not believe her weight had skyrocketed to 252 pounds. She quickly decided that now was the time to do something about her overall health.
She began to make changes in her diet and exercising more. Two and half years later, she has reached all her diet goals. She works out regularly and has a different relationship with food. She did it without a trainer or diet plan and she wants people to know they can do it too. She said that losing weight does not require a lot of money, but a lot of heart.
Joy Bauer: The Joy Fit Club
Kathie Lee and Hoda welcomed Joy Bauer, Today Show nutritionist and author of The Joy Fit Club: Cookbook, Diet Plan and Inspiration, to the show to discuss how Bethany did it. Joy said the weight loss enabled Bethany to change her outlook on life. She had so many smart strategies.
Joy said that everyone seems to veer off on the weekends, so on Mondays Bethany practices Meatless Mondays. All vegetarian, which helps her reboot. She loves to have a small amount of whole wheat noodles mixed with a whole bunch of vegetables and spices. Joy brought two of her own dishes.
A baked potato that she takes black beans and sautees them with salsa, a little Dijon mustard and cumin. A vegetarian frittata with some swiss chard, red bell peppers and feta cheese.
Bethany Taylor: The Reveal
Bethany Taylor came out and looked amazing. She is half her size and has some toned arms. She said she just had to use the top of her head. She was underemployed at the time and had to use what she had. She used the workout DVDs she had at her house. She stopped eating a lot of fast food. Her mantra is: “Pushing past pain through prayer, patience and persistence.”
