The Doctors: Healthy Mexican Meals

Chef Jimmy, the 14-year-old cooking sensation was back on The Doctors, this time to share his guilt-free Mexican meals. He started it off with his Lean Bean Burrito. He turned a calorie- and fat-loaded burrito and turned it into a healthy meal! Instead of frying beans in lard to make refried beans, he used coconut oil. The tortilla he used was homemade and completely paleo! Dr Travis Stork described the tasty burrito as smooth, saying it’s not one he would regret later. He added that it was a bueno!

If you really enjoy chips and dips, try substituting fried corn chips for baked plantains! He just slices the plantains and bakes them until crispy, and then dips them in healthy dips to avoid all the fat and calories a normal chip and dip platter would have! Dr Stork literally got on his knees and bowed down to Jimmy for his tasty, healthy recipes.

The Doctors: Lean Bean Burritos Recipe Ingredients

  • 1/3 C Healthy Coconut Refried Beans
  • 1/4 to 1/2 C roasted pasilla pepper strips
  • 1 Paleo Tortilla
  • 1/4 C choppd tomatoes
  • 1 or 2 thin slices queso fresco

For the Paleo Tortilla:

  • 1 tbsp water
  • 1/4 C arrowroot powder
  • pinch of salt
  • 2 eggs
  • 1 tsp melted coconut oil
  • 1 tsp coconut flour

For the Coconut Refried Beans:

  • 2 tbsp coconut oil
  • 1/2 C finely chopped onion
  • 2 tsp cumin
  • 1 tsp sea salt
  • milk or water as needed
  • 2 C cooked pinto beans
  • 4 cloves minced garlic
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp pepper

The Doctors: Lean Bean Burritos Recipe Directions

For the Burritos:

  1. Put tortillason a flat surface
  2. Spoon the beans onto the middle of the tortilla
  3. Add pepper strips, tomatoes, and quso fresco
  4. Roll up the burrito

For the Paleo Tortilla:

  1. In a medium-size bowl, crack the eggs and whisk in the coconut oil and water
  2. Add the coconut flour, arrowroot powder, and salt, then mix
  3. Heat a small skillet over medium heat and pour about 1/3 of the batter into the skillet, rolling the skillet to coat the bottom evenly
  4. Cook for about one minute on each side

For the Coconut Refried Beans:

  1. Saute the garlic and onions in the coconut oil in a large saucepan until soft
  2. Add the beans and stir
  3. Add the seasonings then mix well
  4. Bring to a low simmer, then let cook for 15-20 minutes
  5. Add milk or water if needed to achieve a smoother texture
  6. Mash the beans once cooled
