Drs: Healthier Snacks + Parsnip Chips & Salsa Fresca Recipe

Dr Travis Stork shared that downing a regular bag of chips isn’t great for your waistline, but he had some great “chip flips” you can start using tonight. Dr Rachael Ross started with Beet Chips, explaining that you can soak thinly sliced beets in vinegar before baking them in an oven for 15 minutes to create “rose petal chips.” Dr Stork said he’s not a big fan of beets but he thoroughly enjoys rose petal chips. You can also sprinkle them with a little salt for added flavor.

The Drs: Brussels Sprout Chips

They also suggested you create healthier chips using Brussels Sprouts. Peel the leaves off and mix them with some olive oil, salt, pepper, and garlic before roasting them until they’re crisp. It’s basically just like kale chips, except you’re using Brussels sprouts instead.

The Drs: Parsnip Chips With Salsa Fresca

Dr Stork and Dr Ross shared their parsnip chips and salsa fresca recipe, which you can find below. Dr Ross said that because parsnips are a little sweet, they almost taste like sweet potato chips and are slightly chewy. Dr Stork said they grew on him and kept coming back for more.

The Drs: Parsnip Chips & Salsa Fresca Recipe Ingredients

Parsnip Chips Ingredients

  • 2 tsp olive oil
  • 5 medium-sized parsnips
  • salt & pepper, to taste

Salsa Fresca Ingredients

  • 1/4 red onion, chopped
  • 8 sprigs cilantro, chopped
  • juice of 1 lime
  • 1/2 tsp salt
  • 4 ripe tomatoes, chopped
  • 1 jalapeno pepper, minced
  • 3 garlic cloves, minced
  • 1/4 C olive oil

Parsnip Chips Directions

  1. Preheat oven to 320 degrees
  2. Use a vegetable peeler to peel each parsnip into long strips, discarding the first layer
  3. Toss strips into a large bowl with olive oil & season with salt & pepper
  4. Place strips in a single layer on a baking tray
  5. Roast in the oven for 25-30 minutes, turning over halfway through

Salsa Fresca Directions

  1. Combine all ingredients in mixing bowl & mix thoroughly
  2. Let stand 15 minutes before serving
