The Chew: Mario Batali Spicy Sausage Lasagna Recipe Ingredients

Mario’s recipe comes in at about 400 calories per serving.

  • 2 lb Spicy Italian Sausage
  • 2 1/2 lb Thin Fresh Pasta Sheets
  • 1 Bulb Onion, halved and sliced
  • 3 cloves Garlic, sliced
  • 3 cups Parmesan Cheese
  • Pasta Sauce
  • Olive Oil
  • Salt & Pepper

  • 4 cups Basil Leaves
  • 1 cup Pine Nuts
  • 1 cup Parmesan Cheese
  • 2 cloves Garlic
  • Olive Oil
  • Salt & Pepper

The Chew Spicy Sausage Lasagna Recipe Directions

  1. Preheat oven to 425 F.
  2. Boil water in a large stock pot with salt.
  3. Prepare an ice bath.
  4. Blanch pasta sheets in batches, cooking about two or three minutes.
  5. Remove sheets to ice bath.
  6. Let dry on a baking sheet, separating layers using parchment paper.
  7. Repeat steps until all pasta has been blanched.
  8. Heat olive oil in medium high in a large saute pan.
  9. Add sausage, crumbling and cooking about eight minutes.
  10. Move sausage over in the pan to make room for onions.
  11. Season with salt and pepper. Caramelize onions for a few minutes.
  12. Add garlic and cook just 30 seconds.
  13. Divide sauce into two bowls.
  14. Stir sausage in one sauce bowl and mix pesto in the other.
  15. To make the pesto, combine pesto ingredients in a food processor and drizzle olive oil to create a paste. Use salt and pepper as needed.
  16. Layer lasagna in a prepared baking dish.
  17. Spread a layer of pesto sauce in the bottom. Top with pasta sheets, sausage, and cheese.
  18. Repeat layering until ingredients are used up. Finish with pesto sauce and cheese.
  19. Bake 25-30 minutes, until golden brown.
  20. Remove and let cool 20-25 minutes. Serve warm with pesto and cheese.

The Chew Light Sausage Lasagna Recipe Ingredients

Daphne Oz showed us how to lighten up this sausage lasagna with her twist on the recipe. She said her version has 215 calories.

  • 1 lb Fresh Pasta Sheets
  • 2 shaved Zucchini
  • 1 lb Spicy Italian Sausage
  • 1 large Onion
  • 3 cloves Garlic
  • 1/2 bunch Asparagus, chopped
  • 2 cups Marinara Sauce
  • 2 cups Basil Pesto
  • 1 cup Parmesan Cheese
  • Olive Oil
  • Salt & Pepper

The Chew: Daphne Oz Light Sausage Lasagna Recipe Directions

  1. Preheat oven to 375 F.
  2. Use steps 2-7 above to blanch pasta sheets.
  3. Place zucchini in a colander and season with salt. Reserve.
  4. Heat olive oil in a saute pan on medium.
  5. Add sausage and crumble while cooking to a dark brown.
  6. Reserve cooked sausage.
  7. Add onions to sausage pan with asparagus and cook until just soft.
  8. Add garlic and cook another half minute.
  9. Mix in marinara sauce and return sausage to pan until warmed.
  10. Layer lasagna in a prepared baking dish, starting with pasta.
  11. Build layers of sausage and Parmesan, followed by zucchini and pesto.
  12. Repeat until all ingredients are used up, with a layer of cheese on top.
  13. Bake 30-35 minutes, until golden brown. Let rest before serving.
