The Chew: Guy Fieri, Mario Batali, And Michael Symon Hit The Grill

One Memorial Day Weekend tradition that many grillers swear by is grilled sausage. Rather than just give us one recipe to go at it with, though, they gave us three. Guy Fieri, who recently released his newest Diners, Drive-Ins & Dives book, showed us his grilled lamb sandwiches recipe; Michael Symon gave us a taste of Cleveland with his Cleveland bratwurst recipe; and  Mario Batali did what he always does – make it spicy – with this sausage and pepper sandwich recipe.

The Chew: Guy Fieri's Grilled Lamb Sandwich Recipe & Bratwurst Recipe

Guy Fieri gave us a Memorial Day weekend grilling idea with his grilled lamb sandwich recipe.

  • 6-8 links Merguez Lamb Sausage
  • Extra Virgin Olive Oil (plus more for grilling)
  • Salt and freshly cracked Black Pepper
  • 1 Sourdough Baguette (use 2 if serving 8)
  • Harissa Mayo (for serving; recipe follows)
  • Quick Pickled Sweet Cucumber (for serving; recipe follows)
  • Shaved Brussels Sprouts adn Kale Slaw with Pecorino and Toasted Hazelnuts (for serving)

For The Harissa Mayo

  • 1/2 cup Mayonnaise
  • 1/4 cup Sour Cream
  • 2 tablespoons store-bought Harissa Paste
  • 1/2 teaspoon Red Wine Vinegar
  • 1/4 teaspoon ground Cumin
  • Salt and freshly cracked Black Pepper

For the Quick Pickled Cucumbers:

  • 1 Hot House Cucumber (thinly sliced)
  • 1/2 Fresno Chile (halved lengthwise; seeded if desired and thinly sliced)
  • 1 cup White Vinegar
  • 3/4 cup Sugar
  • 1 teaspoon Kosher Salt

The Chew: Guy Fieri’s Grilled Lamb Sandwiches with Harissa Mayo and Pickled Vegetables Directions

  1. Preheat the grill to medium-high heat.
  2. Lightly oil grill so it is non-stick, and place lamb sausages on grill.  Mark off and cook for 3 to 4 minutes per side.
  3. When done, remove from the grill.
  4. Take the baguette and split horizontally lengthwise so you have long halves.
  5. Drizzle with a little olive oil and place on the grill to warm the bread through and get slightly crisp, about 2 minutes per side.
  6. To assemble the sandwiches, smear the bread with Harissa Mayo, stack lamb sausage on top and top with Kale Slaw and Quick Pickled Sweet Cucumbers.
  7. Place the top of the baguette on secure with bamboo skewers and slice the sandwich into quarters.

For the Harissa Mayo: 

  1. Mix the mayonnaise, sour cream, harissa, vinegar and cumin together in a large bowl and stir with a whisk to combine.
  2. Taste for seasoning and add salt and pepper as desired.
  3. Refrigerate, and serve smeared on lamb sandwiches.

For the Quick Pickled Cucumbers:

  1. Add the cucumber and chile slices to a medium bowl and toss to combine.
  2. In a medium saucepan, add the vinegar, sugar, 1/2 cup water and salt.
  3. Heat gently, stirring, just until the sugar and salt dissolve.
  4. Pour over the cucumbers and chiles in the bowl.
  5. Set aside to marinate at least 15 minutes before serving.

The Chew: Michael Symon’s Cleveland Bratwurst Recipe

  • 1 pound fresh Bratwurst Links
  • 1 Onion (small dice)
  • 1 teaspoon Paprika
  • 1 tablespoon Caraway Seeds
  • 4 cups Sauerkraut (drained)
  • 6 ounces Beer
  • 6 Pretzel Rolls (split)
  • Extra Virgin Olive Oil
  • Kosher Salt
  • Your Favorite Mustard (to serve)

The Chew: Michael Symon’s Cleveland Bratwurst Directions

  1. Preheat your grill to medium.
  2. When it is up to temp, grill your bratwursts for 10 to 12 minutes, turning occasionally until golden brown and warmed through.
  3. If you can’t find bratwurst, then you can substitute kielbasa.
  4. In the meantime, place a medium saucepot over medium heat.
  5. Add the oil and the onions along with a good pinch of salt.
  6. Cook for 4 to 5 minutes until softened then add the sauerkraut, paprika and caraway seeds along with beer.
  7. If you use canned sauerkraut, then make sure you rinse it very well for better flavor.
  8. Simmer until the kraut is heated through, about 5 minutes.
  9. When the bratwursts are ready, cut them lengthwise and place them on the pretzel rolls that have been spread with mustard.
  10. After removing bratwursts from the grill, place them in the sauerkraut to keep them from drying out.
  11. Top with some of the sauerkraut and enjoy.

  • 6 Hot Italian Sausage Links
  • 1 Red Bell Pepper (thinly sliced)
  • 1 Orange Bell Pepper (thinly sliced)
  • 3 Serrano Peppers (thinly sliced)
  • 3 Pickled Jalapenos (thinly sliced)
  • 1 large White Onion (thinly sliced)
  • Extra Virgin Olive Oil
  • Salt and freshly cracked Black Pepper
  • Pickled Cherry Peppers to serve
  • 6 Hero

The Chew: Mario Batali’s Sausage and Pepper Sandwiches Directions

  1. Heat a grill to medium-high. 
  2. Place sausage on grill and cook until crispy and lightly charred on both sides.
  3. Heat a large saute pan with a few tablespoons of olive oil.
  4. Cook peppers and onions, seasoning with salt and pepper, until soft, about 8 minutes.
  5. Serve sausage and peppers on a hero roll. Garnish with cherry peppers
