The Chew Dish of the Day: Cauliflower Sformata Recipe

Mario Batali had a special Dish of the Day in honor of Presidents Day, from the show’s Presidential Plates episode. He made it using veggies that grow in the White House garden. Check out this Cauliflower Sformata recipe.

This type of dish is similar to a fallen souffle, and the word sformata means it is cooked in a form and removed before serving. If you don’t like cauliflower, you can substitute another vegetable instead.

Mario Batali Cauliflower Sformata Ingredients

  • 1 1/2 lb. Cauliflower or other veggie
  • Olive Oil
  • Salt & Pepper
  • 1/2 cup Ricotta Cheese
  • 1 Onion, yellow
  • Bread Crumbs
  • 4 Eggs & 3 Egg Yolks
  • 3/4 cup Parmigiano-Reggiano
  • Bechamel Sauce

The Chew: Cauliflower Sformata Directions

  1. Preheat oven to 350 F.
  2. Boil water to blanch cauliflower for about three minutes. Then drain and cool.
  3. On medium-high, saute onion in oil with salt and pepper.
  4. Then add cauliflower and more salt and pepper if needed, tossing in oil.
  5. Cook about three minutes. Remove and cool.
  6. Transfer cooled mixture to food processor and blend until smooth.
  7. Prepare a bundt pan with olive oil spray and a dusting of bread crumbs.
  8. Pour cauliflower mixture into bundt pan, then place into roasting pan with 2” cool water.
  9. Bake about one hour, until cooked through. Test with a toothpick before removing from oven.
  10. Let stand 15 minutes before removing from bundt pan.
  11. Plate and serve with braised greens and carrot vinaigrette.

The Chew: Mario Batali Braised Greens Recipe

Ingredients

  • 2 bunches chopped Kale or greens
  • 5 sliced Garlic cloves
  • 1 Onion, sliced
  • 1 cup Chili Flakes
  • 1 cup Water
  • Olive Oil
  • Salt & Pepper

Directions

  1. Saute onions in olive oil with salt & pepper; then add in garlic and chili flakes.
  2. Add water, cover, and cook about 15-20 minutes, until liquid reduces and kale becomes tender.
  3. Season as desired before serving.

The Chew: Carrot Vinaigrette Recipe

Finish it all off with this easy vinaigrette that Mario said is great with sweet veggies like carrots.

Mario Batali Carrot Vinaigrette Ingredients

  • 3 Carrots, roasted
  • 2 Shallots, sliced
  • 1 tbsp Dijon Mustard
  • 1/4 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • Salt & Pepper

Combine all ingredients in a bowl and reserve.
