Carla Hall and her mother Audrey made Lemon Blueberry Pancakes with blueberry syrup

  • 3/4 cup Flour
  • 1 tablespoon Baking Powder
  • 1/2 cup Sugar
  • 1/2 teaspoon Ground Cinnamon
  • 1 Egg (lightly beaten)
  • 1 1/4 cup Buttermilk
  • Zest of 1 Lemon
  • 4 tablespoons Butter (melted and cooled slightly)
  • 1 pint Blueberries

This is a pretty simple recipe, all your need are two mixing bowls, a griddle and a whisk. In the first bowl, you combine the flour, sugar, baking powder and cinnamon. You mix that up the best you can. In the second bowl you put the egg, the buttermilk and vanilla and start whisking it. As you whisk it you add some lemon zest. Then you pour the contents of the wet bowl into the dry bowl and mix that all together. Then add your blue berries and pour that batter on a buttered griddle.

When the pancaked are finished add some butter and some syrup. In this case Carla has a special blueberry syrup made of maple syrup and blueberry jam.
