The Chew Viewer’s Choice episode included Carla Hall’s Triple Lemon Bars recipe, and for a lighter option, you could try the oatmeal crust from Daphne Oz.


Carla Hall Shortbread Crust Ingredients

  • 2 sticks Butter, soft
  • 1/2 cup Sugar
  • 2 cups Flour
  • 1 tsp Vanilla Extract
  • Zest of 1 Lemon
  • 1/2 tsp Salt

Carla Hall Triple Lemon Bars Filling Ingredients

  • 7 Eggs
  • 3 1/4 cups Sugar
  • 1 cup Lemon Juice
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Flour
  • 1 cup Confectioner’s Sugar

The Chew: Triple Lemon Bars Directions


  1. Preheat oven to 350 F.
  2. Combine butter and sugar in a bowl for about five minutes, until fluffy.
  3. Add in vanilla extract and lemon zest, until blended.
  4. Combine flour and salt, mixing to create dough.
  5. Press dough into bottom of a 9×13 baking dish. It should be 1/2” up the sides.
  6. Chill about 12 minutes, until firm.
  7. Bake in oven for 12-15 minutes, until pale gold. Let crust cool, but leave the oven on.


  1. Whisk together eggs, sugar, and lemon juice in a bowl.
  2. In a separate bowl, combine flour, salt, and baking powder.
  3. Combine flour and egg mixtures, whisking slowly until combined.
  4. Pour mix into your crust and bake 35-40 minutes, until set.
  5. Let cook on a wire rack after baking.
  6. Cut into squares.
  7. Before serving, combine confectioner’s sugar with remaining lemon zest to garnish.

The Chew: Daphne Oz Oatmeal Crust Recipe

If you want to go a little lighter, you can create an oatmeal crust that cuts the calories and sugar content. Here is how Daphne Oz said to do it.


Oatmeal Crust Ingredients

  • 1/2 cup Coconut Oil
  • 1 tsp Vanilla Extract
  • 1 1/2 cups Quick Oats, ground
  • 1/4 cup Sugar
  • 1/2 tsp Salt

The Chew Oatmeal Crust Directions

  1. Preheat oven to 350 F.
  2. Whisk melted coconut oil with sugar for about five minutes.
  3. Beat in lemon zest and vanilla extract until combined.
  4. Mix in your oats and salt until combined; do not over-mix.
  5. Press dough into a 9×13 baking dish, rising about 1/2” from the bottom of the dish.
  6. Let cool and follow filling directions listed above.
