Michael Symon prepared his own St. Patrick’s Day creation, a Beef Stout Stew recipe, for Extra Value Friday.

Since St. Patrick’s Day weather can be chilly, a hearty and warm meal such as a stew can be a great way to end the day’s celebrations.


For this recipe, don’t worry so much about getting crispy bacon. You want the flavor to come out in the dish, almost like a braised bacon, according to Symon.

  • 2 lb Chuck Roast, cubed
  • 1/2 lb Bacon
  • 1 Red Onion, diced
  • 2 stalks Celery, diced
  • 2 Carrots, diced
  • 3 cloves Garlic, diced
  • 8 oz Mushrooms
  • 12 oz Stout Beer
  • 3 cups Beef Stock
  • Rosemary & Thyme
  • Salt & Pepper
  • Olive Oil
  • Sour Cream
  • Parsley
  • Cheddar Cheese

The Chew: Beef Stout Stew Recipe Directions

  1. Heat olive oil in a heavy pot on medium.
  2. Season your chuck as desired.
  3. Dredge in flour and brown in your pot.
  4. After about 10 minutes, meat should be browned.
  5. Add in bacon and stir.
  6. Mix in vegetables, along with salt and pepper.
  7. Add stout to pot to deglaze. Bring to a boil.
  8. Add in stock.
  9. Tie herbs with twine and add to pot.
  10. Reduce heat to simmering.
  11. Cover and cook about 90 minutes to two hours.
  12. Adjust seasonings as needed.
  13. Remove herbs and discard.
  14. Garnish with sour cream, parsley, and cheese before serving.
