The Chew: Mario Batali Asparagus Milanese

Mario explained that foods across Italy can vary from region to region. This dish was inspired by Milan’s style of cooking. Different regions of the country prefer butter, lard, or extra virgin olive oil.

The Chew: Asparagus Milanese Recipe & King of Greens Salad Recipe

The Chew’s Mario Batali made an Asparagus Milanese Recipe, while Daphne Oz showed why Kale is the king of greens and how to make it into a delicious salad.

Whenever possible, Mario Batali said that you should get farm fresh eggs, because the eggs you find in a grocery store could be up to eight weeks old. Eggs and dairy can make for great finds at your local farmer’s market.

Mario Batali Asparagus Milanese Recipe Ingredients

  • 2 bunches Asparagus
  • 5 large Eggs
  • 2 tbsp Butter
  • 2 Lemons
  • Parmesan Cheese
  • Salt & Pepper
  • Olive Oil

The Chew Asparagus Milanese Recipe Directions

  1. Heat a saute pan on medium high.
  2. Toss asparagus in a few tablespoons of olive oil, seasoning with salt and pepper.
  3. Grill it for a few minutes on each side. The color should be bright green, with some charred spots.
  4. In a separate pan, on medium heat, heat butter and fry eggs to desired doneness.
  5. Divide asparagus among serving plates, topping each with an egg.
  6. Top with parmesan, lemon zest, and fresh squeezed lemon juice.
  7. Season with additional salt and pepper as desired.

The Chew: Daphne Oz’s King of Greens Salad Ingredients

The key to this salad is massaging oil into the kale, getting to to start breaking down so it can absorb all the fresh flavors of the salad ingredients.

  • 1 bunch Black Kale
  • 2 Lemons
  • 1/3 cup Pine Nuts
  • 1/4 cup Pecorino
  • 1/3 cup Currants
  • 1 tsp Red Chili Flakes
  • 1/4 cup Olive Oil
  • Salt & Pepper

The Chew King of Greens Salad Recipe Directions

  1. In a mixing bowl, season kale with salt and pepper. Add olive oil and mix well by hand.
  2. Add fresh lemon juice and lemon zest to the kale mixture.
  3. Mix in currants, pine nuts, and pecorino cheese to combine.
  4. Serve salad with The Chew’s favorite spice, red chili flakes.
