Continuing The Chew’s week-long Mother’s Day celebration extravaganza, the cast opened the show drinking “Mom-mosas,” which is kind of incredibly cute and definitely something I will be calling mimosas for the rest of the weekend. Also, all week long the hosts’ moms have been joining in the fun on set. Today it was Daphne Oz’s mother, Lisa Oz (and the wife of the famed Dr. Oz), who visited with a special recipe. The Oz Family Fried Rice recipe. She also brought some interested fact about Daphne such as the lowest grade she ever got on a report card was a B+ and that the one boyfriend mom and dad didn’t approve of is known only as “Motorcycle Guy.”

The good thing about the Oz Family Fried Rice Recipe is that it’s so easy because the ingredients aren’t set in stone. It’s basically throw all your leftovers into a pot. It’s a little more complicated than that, but not more difficult. It’s also vegetarian which is a plus or minus depending on who you’re talking to. Mario Batali and Michael Symon sure seemed to think of it as a minus, but Lisa Oz stands by it being a plus. Even though it’s vegetarian, it is chock full of protein (tofu and eggs) and it has plenty of fiber too. So in addition to being easy, the Oz Family Fried Rice Recipe is a healthy one.

Ingredients

  • 1 cup Short-Grain Brown Rice
  • 2 tablespoons Coconut Oil
  • 1 Onion (diced)
  • 2 Carrot (diced)
  • 1 cup Snow Peas
  • 4 Scallions (chopped)
  • 1/2 cup Baked Tofu (cubed)
  • 2 tablespoons Soy Sauce
  • 2 Eggs (beaten)
  • Salt
  • Pepper
  • 1 teaspoon Hot Sauce
  • 1 bunch Fresh Cilantro (leaves only)
  • 2 Garlic Cloves (minced)
  • 6 Skiitake Mushrooms (sliced)
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Rice Vinegar
  • 2 tablespoons Freshly Grated Ginger

Directions

Grab a cast iron skillet, we’re going stir-frying! Put the skilled on the stove, cover it in coconut oil and turn the heat all the way up. The first thing to go in is the chopped onions. Next to go in is the chopped garlic and ginger, followed by chopped carrots. Finally it’s time for the chopped mushroom and really, as stated earlier any veggies you want to throw in there. The Oz Family Fried Rice Recipe doesn’t call for anything specific. The basis is just throwing in whatever you have lying around.

Now it’s time to slice the baked tofu. As you slice it throw the sauce in the skillet. The sauce it a mixture of soy sauce, Sriracha hot sauce, rice vinegar and sesame oil. When finished slicing, the tofu gets thrown in. Stir-fry instruction are pretty easy. Then the snow peas and any other veggies you feel like.

The final stage before serving is to throw in cooked rice and then the two eggs. Make sure to scramble the eggs, you’re not making veggie fried rice omelet, although, that is a good idea for another time.

Finally time to serve at which point add some cilantro and scallions and enjoy.
