Together, they prepared a Turkey Pot Pie for Two, because what’s better to share than comfort food? The Chew: Turkey Pot Pie For Two Recipe

  • 1 onion – peeled, small dice
  • 3/4 C parsnip – peeled, medium dice
  • 2 C chicken stock
  • 1 tbsp sage – chopped
  • 1/2 C frozen peas – thawed
  • 1 sheet store-bought pie dough – thawed
  • 4 tbsp butter
  • 3/4 C sweet potato – peeled, medium dice
  • 4 tbsp all-purpose flour
  • 1/4 tsp grated nutmeg
  • 1 C store-bought roasted turkey breast – skin removed, shredded
  • 1/4 C heavy cream
  • kosher salt and freshly ground black pepper

The Chew: Turkey Pot Pie For Two Recipe Directions

  1. Preheat the oven to 350 degrees
  2. Melt the butter in a small Dutch oven or high-sided saute pan over medium heat
  3. Add the sweet potato, onion, and parsnip, then cook for about 4 minutes, until the onions are translucent
  4. Season with salt and pepper, then add the flour and stir to coat the vegetables
  5. Cook for another minute, then slowly pour in the stock and stir to break up any lumps
  6. Bring back to a simmer and stir to combine
  7. Let the mixture cool to room temperature
  8. Remove the mixture to an 8-inch deep-dish cast-iron skillet
  9. Top with pie crust, then tuck in the edges
  10. Cut 4 slits in the top of the crust and brush with egg wash
  11. Bake for 15 minutes or until the crust is golden brown
  12. Remove from the oven and let cool
