With Mario’s help, Bill learned how to make a new family favorite. His Tortellini en Brodo is essentially homemade pasta in a flavorful broth. It’s a warm and comforting dish that will warm your heart and soul.

The Chew: Tortellini En Brodo Recipe

For the Brodo:

  • 3 carrots – peeled, coarsely chopped
  • 4 stalks celery – coarsely chopped
  • 1 tbsp black peppercorns
  • 1 whole chicken – cut into 4 pieces
  • 2 onions – peeled, coarsely chopped
  • 1 tbsp tomato paste
  • 1 bunch parsley stems only

For the Filling:

  • 4 oz mortadella – finely diced
  • 4 oz ground turkey
  • 1 egg – beaten
  • 1/4 C parsley – roughly chopped, to garnish
  • 4 oz prosciutto – finely diced
  • 1/2 C Parmigiano-Reggiano – grated + more to garnish
  • 4 oz ground pork
  • 1/8 tsp nutmeg

For the Tortellini:

  • 1 1/2 recipes basic pasta dough or 1 lb fresh pasta sheets

For the Brodo:

  1. Put all the ingredients for the stock in the bowl of a slow cooker, then cover with water, leaving an inch of room at the top
  2. Turn on low and cook for 4 1/2 to 5 hours
  3. Remove the chicken pieces from the stock and strain the stock through a fine mesh sieve

For the Filling:

  1. In the bowl of a food processor, pulse the prosciutto, Parmigiano-Reggiano, and mortadella until finely ground
  2. Remove to a large bowl then add the pork and turkey
  3. Mix to combine then add the egg and season with salt, nutmeg, and pepper
  4. Set aside until ready to use

For the Tortellini:

  1. Roll the pasta into sheets using a pasta machine until you reach the number 9 setting
  2. Cut the pasta into 1 1/2-inch squares
  3. Put 3/4 tsp of the filling into the center of each square, then fold into triangles
  4. Press out any air around the filling, then seal the edges
  5. Bring the points of the long side of the triangle together to make a ring, then seal
  6. Bring the chicken stock to a boil
  7. Drop the tortellini in the boiling stock and simmer for 7-8 minutes, until tender and cooked through (the tortellini should be floating)
  8. Season with salt and pepper
  9. Divide the pasta between bowls then add ladles of broth
  10. Top with grated Parmigiano-Reggiano and parsley
