Actor Sterling K. Brown described his Emmy win as “surreal” when talking with Mario Batali on The Chew. He portrayed Christopher Darden in The People v. O.J. Simpson and absolutely nailed the role, so it wasn’t too much of a surprise for everyone else when he won the Emmy for it. Now, Brown stars in the hit show This Is Us, proving that he’s one busy, talented man! Fortunately for us, Brown stopped by The Chew to spend some time in the kitchen with Mario. After revealing that Sweet Potato Pie was one of his favorite Thanksgiving recipes, Mario excitedly exclaimed that it was that exact dessert they would be making together!

The Chew: Sweet Potato Pie Recipe

For the Pie Crust:

For the Sweet Potato Pie:

  • 3 large eggs
  • 1 C light brown sugar – packed
  • 2 tbsp bourbon (optional)
  • 1 tsp vanilla extract
  • 1 pint vanilla ice cream – to serve
  • 2 lbs sweet potatoes (3-4 large potatoes)
  • 4 tbsp unsalted butter – melted
  • 1/2 C half-and-half
  • 2 tbsp molasses + more for serving (optional)
  • 1 tsp freshly grated nutmeg

For the Whipped Cream:

  • 2 tbsp powdered sugar
  • 1 C heavy cream
  • 1/2 tsp vanilla

For the Pie Crust:

  1. In a large bowl, combine the baking powder, salt, and flour
  2. Add the butter and toss to coat in the flour
  3. Mix with a pastry blender or the back of a fork until the butter is broken into pea-sized pieces
  4. Add 6 tbsp ice water and mix just until the dough comes together, adding a tbsp of water at a time if needed
  5. Dust a work surface with flour and turn the dough out onto the surface
  6. Cut in half and make 2 discs
  7. Dust with more flour then wrap in plastic wrap and place in the fridge for at least 2 hours, up to 2 days
  8. When ready to roll out the crust, dust your work surface and use a rolling pin
  9. Roll the dough until 12-inches across
  10. Carefully line a 9-inch pie pan with the dough and cut away any excess dough hanging over the sides
  11. Place the crust in the fridge until ready to fill
  12. Use the second disc for another pie or as a top crust for a double-crusted pie recipe

For the Sweet Potato Pie:

  1. Preheat the oven to 400 degrees
  2. Line a baking sheet with foil or a silicone mat
  3. Poke each potato several times with the tip of a small, sharp knife
  4. Put on the baking sheet and roast for 60 minutes, turning halfway through
  5. When cool enough to handle, remove the skins then put the flesh in a large bowl and mash with a fork
  6. Prebake the prepared pie crust for 12 minutes, then reduce the oven temperature to 350 degrees
  7. In the bowl of a stand mixer fitted with the paddle attachment, combine the sugar, butter, eggs, half-and-half, bourbon (if using), vanilla, molasses, and nutmeg until smooth
  8. Add the roasted sweet potato and mix until smooth
  9. Pour the filling into the pie crust and bake for 45 minutes until the filling starts to set
  10. Let cool to room temperature
  11. Serve with whipped cream, a drizzle of molasses, and vanilla ice cream

For the Whipped Cream:

  1. In a chilled large bowl, add the vanilla and heavy cream
  2. Whisk until foamy
  3. Add sugar and whip until soft peaks form
