The Chew: Monster Whoopie Pies Recipe

For the Cakes:

  • 1/2 C unsweetened cocoa
  • 1/2 tsp Kosher salt
  • 1 C sugar
  • 1 C whole milk
  • 2 C all-purpose flour
  • 1/2 tsp baking soda
  • 1 stick unsalted butter – at room temperature
  • 1 large egg

For the Filling:

  • 2 C powdered sugar
  • 1 C mascarpone – soft
  • 1 stick unsalted butter – softened
  • 1 vanilla bean – scraped
  • 1/2 C white chocolate – melted

To Assemble:

  • 1 package candy eyeballs (1-oz)

  1. Preheat the oven to 350 degrees
  2. Line 2 baking sheets with parchment paper

For the Cakes:

  1. In a medium bowl, add the cocoa, flour, salt, and baking soda, then whisk to mix
  2. In the bowl of a stand mixer, cream the sugar and butter on high for about 4 minutes, until fluffy
  3. Add the egg and mix at medium speed until incorporated, then turn the speed to low, add the flour mixture in two batches alternating with the milk, and mix until just blended
  4. Use a spoon or an ice cream scoop to drop 2 tbsp of the batter onto each baking sheet, leaving 2 inches of space between each cake
  5. Bake until firm, approximately 8-10 minutes
  6. Let cool for 5 minutes on the baking sheet, then transfer to baking racks to cool completely

For the Filling:

  1. In the bowl of a stand mixer, beat the powdered sugar and butter at low speed until combined
  2. Increase the speed to high and beat for 5 minutes, until fluffy
  3. Add the vanilla bean pulp and throw away the bean
  4. Add mascarpone and mix at low speed for about a minute to blend
  5. Slowly incorporate the melted white chocolate

To Assemble:

  1. Fill a pastry bag with the filling and pipe onto the flat side of half the cakes
  2. Top with the rest of the cakes, flat side facing inward
  3. Decorate the front of each whoopie pie with the candy eyeballs, using the filling to make them stick
