The Chew: Maple Pecan Bourbon Balls Recipe

  • 4 oz bittersweet chocolate chips
  • 1/2 C heavy cream
  • 1 1/2 C ground store-bought pecan shortbread cookies
  • 1/2 tsp Kosher salt
  • cooking spray – to grease
  • 4 oz semi-sweet chocolate chips
  • 2 tbsp maple syrup
  • 1 1/2 C chopped pecans – toasted, divided
  • 5 tbsp bourbon

  1. Grease an 8×8-inch baking dish with cooking spray
  2. Put the chocolate chips in a large bowl
  3. In a medium saucepan, add the heavy cream and bring to a simmer
  4. Pour in the maple syrup and stir until combined
  5. Pour the mixture over the chocolate and let it sit for 5 minutes, then stir until smooth
  6. Add the bourbon and salt, then stir until incorporated
  7. Put the pecan shortbread cookies and 1 C pecans in the bowl of a food processor
  8. Pulse until finely ground, then add to the chocolate and stir
  9. Remove the mixture to the prepared baking dish and set in the fridge for an hour
  10. Remove and scoop into 1-inch balls with a small cookie scoop
  11. Use your hands to roll and smooth
  12. Put the remaining 1/2 C chopped pecans in a baking dish
  13. Roll the balls in the chopped pecans and let set
  14. Store in the fridge and serve room temperature
