The Chew: Hazelnut-Crusted Goat Cheese Crostini Recipe

  • 2 C hazelnuts – shelled, toasted
  • 2 tsp flaky sea salt
  • olive oil – to drizzle
  • Kosher salt and freshly ground black pepper
  • 1 log goat cheese – 10-oz, at room temperature
  • 1/4 tsp smoked Spanish paprika
  • 3 tbsp rosemary – leaves only, chopped
  • 1 loaf crusty Italian bread or baguette – sliced 1/2-inch thick, toasted

  1. Put the hazelnuts in a food processor and pulse until coarsely chopped
  2. Add the paprika and rosemary, then season with flaky sea salt and pepper
  3. Remove to a baking dish
  4. Roll the goat cheese log in the hazelnut mixture, pressing the nuts into the cheese
  5. Remove to a board and drizzle with olive oil
  6. Slice and serve on toasted bread
