For game day, Mario Batali prepared his Green Chile Taquitos Recipe, a spicy and slow-cooked masterpiece. Wash it down with a Grapefruit Jalapeno Margarita.

Substitute your own favorite slow-cooking and inexpensive cut of meat for pork if you prefer. Cook faster if you prefer by cutting your meat into smaller pieces.

  • Pork Butt
  • Tomatillos
  • Poblano Peppers
  • Jalapeno Peppers
  • Serrano Peppers
  • Onions
  • Garlic
  • 2 tbsp Cumin
  • Cilantro
  • Ale Beer
  • Chicken Stock
  • Vegetable Oil
  • Salt & Pepper
  • Tortillas

Mario Batali: The Chew Green Chile Taquitos Recipe Directions

  1. Season pork with salt and pepper.
  2. Brown it on all sides in the pan. Reserve.
  3. Saute onions and garlic in the pot.
  4. Add cumin.
  5. Use beer to deglaze the pan.
  6. Roast your peppers over an open flame to char the skins.
  7. Peel the skins. Use running water if necessary.
  8. Blend tomatillos with peppers, salt, water and cilantro to puree.
  9. Pour the blended mixture into the pot.
  10. Return the pork to the pot and let it simmer, cooking two hours until it’s falling off the bone.
  11. Let cool until you are able to handle it.
  12. Shred the pork.
  13. Cook tortillas on a dry griddle pan.
  14. Scoop the shredded pork mixture into the tortillas and use toothpicks to hold the taquitos together.
  15. Chill for 30 minutes before frying in 360 F oil to crisp the outsides.
  16. Season with smoked paprika and salt before serving.
  17. Serve with hot sauce, guacamole or whatever you like.

Ingredients

  • Grapefruit Juice
  • Lime Juice
  • Simple Syrup
  • Jalapeno Tequila
  • Triple Sec

Directions

  1. Add sliced jalapenos and vodka to a container and let it infuse overnight, or for several days if you have the time.
  2. Combine grapefruit with lime juice, simple syrup, jalapeno tequila, and triple sec.
  3. Shake over ice.
  4. Serve garnished with a jalapeno slice.
