The Chew: Ginger Pumpkin Bars With Cream Cheese Icing Recipe

  • 4 eggs
  • 1 C vegetable oil
  • 2 C all-purpose flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 3/4 C crystallized ginger – finely chopped, tossed in 1 tbsp flour
  • 2 tbsp butter – for greasing
  • 1 1/2 C light brown sugar
  • 1 15-oz can pumpkin puree
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1/8 tsp freshly ground black pepper

For the Cream Cheese Icing:

  • 1 stick butter – softened
  • 1 tsp vanilla extract
  • 2 packages cream cheese – softened, 8-oz each
  • 1 1/2 C powdered sugar

  1. Preheat the oven to 350 degrees
  2. Grease a metal 9×13-inch baking dish with butter, then line with parchment paper, leaving an extra 2 inches of parchment hanging off both sides
  3. Grease the parchment
  4. In the bowl of a stand mixer fitted with the paddle attachment, add the sugar, eggs, pumpkin, and oil, then mix until combined
  5. In a large bowl, add the baking soda, baking powder, flour, ginger, cinnamon, salt, black pepper, and nutmeg, then whisk to combine
  6. Add the flour mixture in batches to the egg mixture and mix until just combined
  7. Add the crystallized ginger and fold until incorporated
  8. Remove to the baking dish and bake for 40 minutes
  9. Remove from the oven and let cool completely
  10. Ice with the cream cheese icing, cut into squares, and serve

For the Cream Cheese Icing:

  1. In the bowl of a stand mixer, add the butter and cream cheese
  2. Beat for about 4 minutes, until light and fluffy
  3. Slowly add in the powdered sugar and beat until well combined
  4. Add the vanilla and mix until incorporated
