Gail Simmons was thrilled to join Clinton Kelly on The Chew, both to cook and to talk about season 14 of Top Chef! She shared how much she loves cooking with and for her daughter, noting just how much of a tradition time in the kitchen can be. Because of that, Clinton surprised Gail with matching “Top Mom” and “Top Kid” chef hats! How adorable! Gail was then kind enough to share one of her favorite recipes to make with her daughter: Maple Pots de Creme with Candied Pecans. This tasty dessert is surprisingly easy to prepare and will disappear in the blink of an eye!

The Chew: Gail Simmons Maple Pots De Creme With Candied Pecans

Gail Simmons from “Top Chef” shared her recipe for Maple Pots de Creme with Candied Pecans as a beautiful and delicious dessert recipe. (tomspix / Flickr)

  • 3 egg yolks
  • 1/4 tsp Kosher salt
  • 1 C milk
  • 1/3 C maple syrup
  • 3 eggs
  • 2 tbsp maple syrup
  • 1/4 tsp vanilla extract
  • 1 C heavy cream
  • 1/4 C candied pecans (broken into pieces)

For the Candied Pecans:

  • 1 large egg white
  • 1/2 C maple sugar
  • 1/4 tsp freshly ground black pepper
  • 1/2 lb pecans
  • cooking spray
  • 1 tsp water
  • 1/4 tsp cayenne
  • 1/2 tsp Kosher salt

  1. Preheat the oven to 325 degrees
  2. In a mixing bowl, whisk together the egg yolks, egg, maple sugar, vanilla, and salt
  3. Add the cream, milk, and maple syrup then whisk until smooth
  4. Strain through a fine mesh sieve into a clean bowl or pitcher
  5. Let stand for a few minutes then skim any foam off the top
  6. Divide the mixture among six 4-oz ramekins
  7. Put the ramekins in a roasting pan or metal 9×13-inch baking pan, then put in the oven
  8. Pour boiling water into the roasting pan until it comes a little more than halfway up the side of the ramekins
  9. Bake until just set on top, about 40-45 minutes
  10. Remove from the water bath and let cool to room temperature
  11. Chill in the fridge until ready to serve
  12. Top with candied pecans before serving

For the Candied Pecans:

  1. Preheat the oven to 300 degrees
  2. Spray a baking sheet with cooking spray or line it with a silicone baking mat then set aside
  3. In a mixing bowl, whisk the water and egg white until foamy
  4. Add the cayenne, sugar, pepper, and salt and whisk again
  5. Fold in the pecans until evenly coated
  6. Spread the mixture onto the prepared baking sheet in a single layer
  7. Bake in the oven for 30-35 minutes until deep brown in color
  8. Let cool completely then store in an airtight container until ready to use
