The hunky actor revealed that he loves Halloween, thanks to his kids, so it was a good thing Michael Symon had just the recipe for him! What kid doesn’t love ice cream? Michael and Boris prepared a Frightfully Freezing Ice Cream Pie. Although Michael went with mint chocolate chip ice cream because of the color, you can easily swap it out for your favorite flavor!

The Chew: Frightfully Freezing Ice Cream Pie Recipe

Michael Symon’s Frightfully Freezing Ice Cream Pie recipe is perfect to satisfy your sweet tooth on the spookiest night of the year! (joyosity / Flickr)

  • 1/2 C unsweetened cocoa powder
  • 4 oz unsalted butter – softened
  • 1/3 C sugar
  • 2 pints mint chocolate chip ice cream – slightly softened
  • 3/4 C all-purpose flour
  • 1/4 tsp baking soda
  • 1 tsp Kosher salt
  • 1 tsp vanilla extract
  • non-stick cooking spray

The Chew: Frightfully Freezing Ice Cream Pie Recipe Directions

  1. Preheat the oven to 350 degrees
  2. Spray a 9-inch pie dish with the cooking spray
  3. In a small bowl, sift the cocoa powder, flour, and baking soda together
  4. In the bowl of a stand mixer with the paddle attachment, cream together the salt, butter, and sugar for about 4 minutes, until light and fluffy
  5. Add the vanilla extract and mix, then scrape down the sides and bottom of the bowl
  6. While mixing on medium-low speed, add the flour in two batches and mix until the dough forms
  7. Flatten the dough into a disk, then roll between 2 pieces of wax paper until you have a 12-inch circle
  8. Put the pie crust into the pie dish, pressing into the bottom and sides of the dish
  9. Trim any crust hanging over the edge, then put in the freezer for 15 minutes to set
  10. Remove the pie crust from the freezer and put in the oven for about 20 minutes, until slightly crispy and cooked through
  11. Remove from the oven and let cool completely
  12. Into the cooled crust, add the ice cream and smooth the top
  13. Put in the freezer until ready to to serve
