Michael Symon was thrilled to make one of the coolest foods ever with who he described as one of the coolest guys ever. He’s best known as Jake Ballard on the hit show Scandal and Scott Foley seemed to be right at home in Walt Disney World. The hosts of The Chew were enjoying the International Food and Wine Festival, and Scott admitted that because he knew he would be coming on the show, he brought his wife and three young kids to enjoy the park for a few days. Scott was excited to learn how to make a Fresh Tuna Burger, sharing that he absolutely loves seafood!

The Chew: Fresh Tuna Burger Recipe

For the Wasabi Mayo:

  • 1 1/2 tbsp water
  • 1 lemon – juiced
  • 2 tbsp wasabi powder
  • 1/2 C mayonnaise

For the Tuna Burgers:

  • 4 scallions – finely sliced
  • 2 cloves garlic – peeled, finely chopped
  • 2 tbsp sesame oil
  • 2 tbsp olive oil
  • 1 1/2 lbs sushi grade tuna steaks – cut into 1/2-inch cubes
  • 1 piece ginger – 2-inches, peeled
  • 1 jalapeno – seeded, finely chopped
  • 2 tbsp mayonnaise
  • kosher salt and freshly ground black pepper

To Serve:

  • 2 jalapenos – shaved, to garnish
  • 4 soft seeded buns – toasted
  • 1/2 C cilantro leaves – to garnish
  • 2 avocados – sliced, to garnish

For the Wasabi Mayo:

  1. In a large bowl, add the wasabi powder and water, then whisk until combined
  2. Add the mayonnaise and the lemon juice, then whisk again
  3. Store in the fridge for at least 30 minutes before serving

For the Tuna Burgers:

  1. In he bowl of a food processor, add the tuna and pulse until finely ground
  2. Spread the tuna out on a parchment-lined baking sheet, then put in the freezer for 15 minutes to chill completely
  3. Also, put a medium mixing bowl, the clean bowl and blade of a food processor in the freezer to chill
  4. Preheat a griddle pan over high heat
  5. In the bowl of a food processor, add the tuna, ginger, scallions, jalapeno, garlic, mayonnaise, and sesame oil, then pulse until combined
  6. Into the chilled mixing bowl, add the tuna mixture and make 4 patties
  7. Season each tuna patty with salt and pepper
  8. Add a drizzle of olive oil and put the patties on the griddle pan
  9. Cook the patties until charred and golden on each side, approximately 1 to 1 1/2 minutes per side

To Serve:

  1. Add the avocado slices to the bottom half of the bun
  2. Top with the tuna patty
  3. Add shaved jalapeno and cilantro
  4. Spread the wasabi mayo on the top bun then set in place and serve
